BREAD PUDDING WITH WHISKEY SAUCE

Alzina Pierce, a chef at the Bon Ton Restaurant in New Orleans. From
LA Bonne Cuisine: Cooking New Orleans Style.
1 loaf (1 lb.) French bread
1 quart milk
3 eggs
2 cups sugar
2 tablespoons vanilla
1 cup raisins
3 tablespoons margarine, melted
Whiskey Sauce, recipe follows
In a bowl, soak bread in the milk. Crush with hands until well-mixed.
Add eggs, sugar, vanilla and raisins. Stir well.
Pour margarine into a 13x9-inch glass pan, add pudding mixture and
bake in a 350-degree oven about 45 minutes, until very firm or a knife
inserted in the center comes out clean. Let cool.
Cut pudding into squares and place in individual dessert dishes.
When ready to serve, drizzle with some of the Whiskey Sauce and heat
under the broiler. Serve more sauce on the side.
Whiskey Sauce
1 stick butter or margarine
1 cup sugar
1 egg
Whiskey
Heat butter and sugar together in a double boiler until very hot and
sugar is well-dissolved.
Beat the egg well. Pour a little of the butter mixture into the egg,
then return the mixture to the double boiler, whisking constantly so
the egg doesn't curdle.
Let cool. Add whiskey to taste.

Bread pudding:
2 cups mixed bread cubes (all at least one day old)
2 beaten eggs
1 cup milk
1/4 cup white sugar
Pinch salt
1/2 teaspoon vanilla or almond extract
1/4 teaspoon nutmeg
candied orange peel (optional)
chopped nuts (very optional)

Preheat oven to 350 degrees F
Grease up a baking pan 8 inches square
Fill pan with bread cubes
beat together eggs, milk, and sugar. Stir in 1/2 teaspoon vanilla or almond extract and 1/4 teaspoon nutmeg.
Pour over bread cubes.
Place a larger pan in the oven. Put the 8 inch pan inside the larger pan, fill the larger pan 1 inch high with hot water.
Bake 45 minutes to one hour or until toothpick comes out of pudding clean.

Bread Pudding
6 servings 1½ hours 1 hour prep
Change to: servings US Metric
2 cups bread, torn into pieces and stale
2 cups milk, scalded and still hot
2 tablespoons butter
3 eggs
3/4 cup sugar
2 cups cold milk
1 teaspoon nutmeg
1 teaspoon cinnamon
Mix together stale bread pieces, hot milk and butter.
Set aside until cool.
Heat oven to 350.
Beat eggs well, add sugar and milk and stir.
Stir in spices if desired.
Mix cold bread mixture with egg mixture.
Pour into buttered casserole.
Bake 30 minutes until pudding has set and is turning golden brown.
Serve warm.

Bread Pudding
10 slices bread
1 cup sugar

4 teaspoons baking powder
2 teaspoons vanilla essence
3 cups milk
4 ounces butter
nutmeg (optional)
raisins (optional)
cinnamon (optional)
6 servings
1. Heat oven up to 350°F.
2. Cut slices of bread into cubes.
3. In a saucepan, heat the milk, and butter but do not allow to boil.
4. To this, add the vanilla, beaten eggs and sugar, when a bit cooled.
5. Add the baking powder and blend until smooth.
6. In an ovenproof tray, layer the cubes of bread and pour over it the liquid prepared above, until the bread is saturated.
7. If desired, sprinkle your choice of nutmeg, cinnamon or raisins.
8. Bake for approximately 30 minutes or until it browns.

Caramel Bread Pudding
6 slices bread, day-old, cut into 1/2 inch cubes
1 cup water, hot
1 cup brown sugar
4 eggs, lightly beaten
2 cups milk, warm
1/2 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon, ground
1/8 teaspoon salt
6 servings
1. Place bread in greased 2-qt. baking dish.
2. Combine water and brown sugar; pour over bread.
3. Combine remaining ingredients; pour over bread.
4. Bake at 350 degrees F for 50-60 minutes or until knife inserted in center comes out clean.
5. Serve warm or cold

Using the basics recipes in the above answers try adding banana. Also the Italian Panatenna bread is good in this recipe instead of white bread.

All of the answers you've received are for Bread & Butter pudding. BREAD PUDDING or Dustmans Wedding cake as it is also known, is made with BREAD, WATER, SUGAR, LARD, DRIED FRUIT & PEEL, MIXED SPICE, FLOUR. If made properly it tastes fantastic.
