Bubble and squeak (sometimes just called bubble) is a traditional English dish made with the shallow-fried leftover vegetables from a roast dinner. The chief ingredients are potato and cabbage, but carrots, peas, brussels sprouts, and other vegetables can be added. It is traditionally served with cold meat from the Sunday roast, and pickles. Traditionally the meat was added to the bubble and squeak itself, although nowadays the vegetarian version is more common. The cold chopped vegetables (and cold chopped meat if used) are fried in a pan together with mashed potato until the mixture is well-cooked and brown on the sides. The name is a description of the action and sound made during the cooking process.

Bubble and Squeak
Serves 4
450g (1lb) Potatoes, cooked and mashed
225g (8oz) Cabbage or Brussel Sprouts, cooked and finely chopped
25g (1oz) Butter or Oil
1 Onion, finely chopped
Heat the butter or oil in a large frying pan.
Add the onion and cook until soft and transparent.
Add the potatoes and cabbage (or sprouts).
Mix well.
Fry over a medium heat, turning occasionally, for 15 minutes or until golden brown.
Serve with bacon and eggs for breakfast or as part of a supper dish.
Note: There is quite some debate as to whether cabbage or brussel sprouts should be used in this recipe, personally I prefer cabbage, but the choice is your.

Bubble and Squeek That is the sound it makes in the pan when you reheat or make it. Like bangers and mash sausage and mashed potatoes. But we watched the two "Fat Ladies" Ride in on there Triumph with side car.

Bubble and squeak is the best thing ever!!!! Mum used to make extra veggies just so we could have bubble and squeak the next day. It is called that because of the sound it makes in the pan when you cook it.

Here's a great recipe for Bubble & Squeak, & it has an explanation for the name. Enjoy!
BUBBLE & SQUEAK
1 lb. or 2 1/2 c. shredded cabbage
3 T. bacon drippings or butter
1 med. onion, chopped
2 c. coarsely mashed potatoes
1/2 tsp. salt
1/8 tsp. ground black pepper
1 lb. roast or corned beef, thinly sliced
Plunge cabbage into a pan of boiling salted water, cook 5 min., thoroughly drain in colander. Heat a heavy 10" skillet over medium heat. Melt drippings, add onions, & cook till soft (about 5 min.). Lightly press on cabbage with the back of a spatula to remove any remaining moisture, & add to the onions. Stir in potatoes, salt & pepper. Press mixture down lightly with spatula. Lower heat to med. low. Top with slices of meat. Cook, covered, about 15 min. Do not stir. Remove cover & cook 10 - 15 min, till bottom is nicely browned. If you listen, closely, you should hear how the dish got its name! While dish is cooking, prepare Wow Wow Sauce below.
BUBBLE & SQUEAK WOW WOW SAUCE:
2 T. butter
2 T. minced onion
2 T. flour
1 c. beef stock
1 T. white wine vinegar
1 T. English style mustard
1/2 tsp. prepared horseradish
1/4 tsp. salt
1/8 tsp. pepper
In a 1 1/2 qt. saucepan, melt butter over med. heat. Add onion, stirring constantly, until soft but not brown. Stir in flour & cook one minute, stirring constantly. Add stock all at once & whisk until smooth. Stir in all remaining ingredients & bring to boil. Reduce heat to medium low & cook, stirring frequently until thickened, about 10 min. Invert skillet contents onto plate. Cut Bubble & Squeak into wedges, & serve with sauce. Serves 6

Yeah course that's, my dogs like it too. we do no longer have mash typically, probably a pair of times per week yet after we do i continuously stay away from dropping for them, each so often i blend in truly of mature cheddar as a manage!
