It's been a few years since I was there, but I started by going to the Hotel Metropole because it has a tourism desk at the base, even for people who aren't staying there. I mostly wandered around the town and took in the amazing scenery, but the thing that sticks in my mind the most was a small boat excursion I took along the lake. The best pictures I have are from the boat looking back toward the shore because it takes you past the most amazing castle that you'd next see from the shore.
On the north side of the river near Interlaken East there's a funicular ride that takes 12 minutes up Harden Kukm (1310 meters up) where you'll have amazing views. You can stay there for a bit or continue to hike up and get even more spectacular views of the Jungfrau.
If you're going to the area and don't just want to stay in Interlaken, I can't encourage you enough to go the towns of Murren and Grindelwald. Murren is great in the winter or summer and is half way up the mountain of the Schilthorn where they filmed "On Her Majesty's Secret Service" and there's a cheesy "007" restaurant at the top. The hotel (there's pretty much just one big one) was the best I've stayed at in Europe.

I stayed at Balmer's herberge when I was there. They had lots of package deals you culd sign up for around the area. Canoing, Bungee jumpiong, skiing, hang gliding etc. I enjoyed a hike up Heimwehfluh. You can also visit mountains such as Schilthorn from Interlaken by train, fenucular and gondala. You can take boat tours in Lake Thun and/or Lake Brienz.

you should defenitly not just stay in interlaken. go for a boat ride to thun, then take the train back to interlaken. on one day, go to muerren/schiltthorn, it is great up there. and then there is an alpine garden at schynigen platten which is awsome!
grindelwald/maennlichen/jungfraujoch is another place to go to. you see, there will be no time to get bored in interlaken!!!! be sure to go shopping too... HAVE A GREAT TIME!!!
