Cornwall is superb. Great scenery, peace and quiet if you want it, trashy night out if you don't (Newquay) lots to see and do. Decent restaurants, (Rick Steins is an experience but there are better places that aren't too packed with folk) You can even fly down there and rent a car to save the drive.
The weather is mild, even out of season.

Oxford - romantic, dreaming spires, great restaurants, walk by the river or through the colleges Good places to stay / boutique hotels - The Bank or Mal Maison.
York - very quaint and full of old pubs, perfect for a weekend. The Minster is stunning, walk around the city walls or through the ancient streets, go on a ghost tour etc Good restaurants too whatever you like. There is a boutique guest hosue called Number 42 or something similar which we've heard good reports about.
Glasgow - surprisingly up and coming packed with trendy bars and art galleries like the world class KelvinGrove. You get much more for your money hotel wise - try The Radisson or The Hilton - both central and their delux rooms are v resaonable if you book through expedia.
Where ever you stay check it is ok through tripadvisor - if it gets good ratings in there.

Isle of Wight - no question.
even the ferry or hovercraft is nice or better still a light aircraft shuttle from Brighton, Portsmouth or Plymouth. The Plymouth one will even serve champagne on the plane and take you over the needles after it rounds Thorness Bay.
Greatest place in the British isles by a long long way. I've already taken steps to move there when I retire and I've studied the Island extensively because it grabbed my interest so much. Beautiful place!

The best place to holiday in the UK is Cornwall, Port Issac is particularly pretty and not too far from other destinations. Newquay is full of youngsters and lager louts so I would stay away from there.

North Pembrokeshire. Lots of gorgeous coves and sandy beaches. Little harbour-side pubs. 187 miles of coast path with the most spectacular scenery in the Uk.

Take your girlfriend to Brighton - the shops are superb. She will love the "Lanes" and the seafood restaurants are superb. Have fun on the pier and visit the Marina - pubs and bars are great. visit the Sea Life Centre and see Lou-Lou the giant turtle. Walk along the never ending promenade when the sun is going down - its really romantic. Yes, its got to be Brighton.

Blackpool if you want trashy fun, the Gower coast in South Wales if you want peace and quiet and beauty, Scarborough if you want a nice mix of everything.
