everytime I try to make onion rings, the batter or bread crumbs, I've tried both ways, always seem to slide off the onions? I can never have a nice thick coat on them.

This one is easy. Bread your Onion Rings and then freeze them for a short time, then rebread them. Place them back in the freezer for a short time and then fry them directly from the freezer. This always works for me at several restaurants that I have managed.

You can try coating it with egg (just dip in once.Not too thick initially), then bread crumb coat it . Put it in the fridge. When it's colder, take it out and compress it lightly so that the crumbs stick bettter to the coat of egg , and make sure it doesn't flake, because it's the base layer.<
Recoat it again, then bread crumb coat it, pop it back in the fridge.Compress. Repeat process until it's quite thick.

Compress it one last time, grease it (the pan,not the onion rings), then fry them. Flip lightly. Tried ...(By me). I'm certain it works.

Make sure the onion rings are dry. Use milk with an egg mixed in it, batter, then wet mixture again, then batter again. Try using a utensil to do this. When I use my hands, which get wet I get the batter then wet and it doesn't adhere as well. Good Luck.

I used to work at a restaurant that made fresh onion rings.

Slice your onions into rings and seperate the rings.

Have an assembly set with 4 pans
from right to left (if you're right handed)
1. onion rings in milk or buttermilk
2. flour
3. beaten egg (or egg substitute from a container)
4. whatever breading you like

-take the onion rings out with one hand shake off milk drop into flour and shake around
-with clean hand remove onion rings and shake off excess flour then drop into egg
-with wet (milk) hand remove from egg and drop into breading and shake around
-with dry (flour) hand shake off excess and move rings to a sheet pan to set for a minute or two (or until you're done breading) then fry

Put the onions in flour first, it helps to make them dryer so the batter will stick

Soak the onion rings in a little milk then flour and batter or flour egg and breadcrumb mine are ok.

put a light coat of plain flower on the first. if the coating is a dry coating do plain flower, egg, then your dry batter.
try the same if it is a batter mix.
i little hint. if you are using a batter make sure it is cold as possible. it makes for a crispier o ring

Are your onions dry or are they wet...perhaps if they are wet the coating can't stick to the onions.

Do you wash your onions? Dont! all ingredients should be at room temperature
