You're supposed to cut it in order to cook it, but man, it is hard to cut. Any tips or tricks?

A sturdy knife to slice acorn squash in half is a necessity. To make the squash easier to cut, pierce the skin in a few spots, place it in a microwave oven and heat on high for 2 minutes. Let stand for another few minutes before carving.

• When halving, cut through the stem end to the point rather than across the diameter.

• To prevent halves from rocking on the baking tray, cut a small slice off the bottom to flatten it.

• The ribbed shape of the acorn squash makes peeling it virtually impossible, but wonderful for stuffing with a wide variety of fillings.
It is most often served cooked in its shell. If you need the pulp only, you'll need to cook it first and then scoop the pulp from the skin. It is done when the flesh is very tender, usually about one hour baking time at 400 degrees F. for halved squash. Timing depends on the size of the squash, but it's difficult to overbake.

• Avoid boiling acorn squash. Boiling damages both the flavor and the texture.

• To quickly microwave acorn squash, cut two whole squash in half, cover and cook for 13 minutes on high. Do not add water.

• Acorn squash can also be cooked whole. Pierce the skin in several places. Place on a baking sheet in 350-degree F. oven for about 1-1/2 hours. Squeeze the squash to test for doneness. When it yields to gentle pressure, it's done. You can then cut it in half, scoop out the seeds and serve or cool and use the cooked innards.

Since the shell of an acorn squash is very hard,
a kitchen saw will work, but another reasonably simple way to cut into a winter squash is to look for the area on the squash that has indentations or ribs. Lay the squash so it's as steady as you can get it, insert the point of a sturdy knife in a crease, give the handle a couple of taps with a to start the cut, then continue thru and remove the seeds.

You can actually cook it in the microwave some before cutting....that way it will be softer. In fact, a lot of recipes that I have ever seen call for full microwave cooking anyway.

Poke holes in the skin before microwaving.

This is my favorite recipe:

CRANBERRY FILLED ACORN SQUASH

2 lg. acorn squash
1 (16 oz.) can whole cranberry sauce
1 tbsp. honey
1/2 tsp. allspice

Prick squash several times with a fork. Microwave 10 to 12 minutes turning over halfway through cooking. Let stand 5 to 10 minutes. Cut in half and remove seeds. Place cut side up on microwave-safe serving dish. Combine remaining ingredients and spoon into squash halves. Microwave on high 3 to 4 minutes just before serving. Serves 4.


I like to finish in the oven with the cranberry mixture in the squash...to get a little bit of color on the squash.

Hint for preparing the squash: to split a winter squash, using a large, sharp knife, place the squash on a towel to keep it from slipping. Work the knife blade (not the tip) into the squash and press firmly, using a rocking motion, until the squash splits. A large and sharp knife put the end of the knife directly in and lower it down (the knife) pushing on the top of the blade to make sure all the knife is in the turn it around to do the other side if its not in half but you can ask at the produce to get it halved or slice most have some any ready that way thats what I usually get.

Any kind of oven roasted fowl works very nicely. Try roasting with your favorite herbal dry rub. The main dish should be savory rather than sweet to balance-out the squash.

jut cut it in half it is diffucult and after you get it in half and clean out the seeds try putting some butter sugar and cinnamon in the center and bake it until its tender you have never had acorn squash until you try this...
