short rice is cooked in water, and has a texture that is like regular white rice. Sweet rice is soaked in water for at least 45 minutes, drained, and place in a special basket that fits ontop of a pot that has boiling water. You steam it that way. After about 10 minutes, you flip the rice over and cook for another 15 minutes. When its done, you transfer it to a basket called a rice basket. It is meant to be eaten with your fingers, because it sticks together, and has a different texture than regular rice. I liken it to sushi rice.It is most common in south east asia, in countries such as thailand and laos.Not so much in vietnamn though, they tend to eat plain white rice. But, it's used as a main staple in the people of these countries diets. They use it to dip in hot sauces, while they eat meats, and is used to make various types of deserts. Sweet rice has a very special soft and sticky charastic and cooked at lower temperature. Cooking Sweet rice does not need high temperature, just soak rice in water for few hour and cook under steam is enough. Sweet rice can be digest in your mouth and converted to glucose so rice tasted slightly sweet.
Most short grain are soft cooking with slightly sticky texture
