He doesnt eat chicken. We had sauages, baked potatos and vegies last night. He likes pasta but I want something Healthy.

Potatoes with cheese

Peel off the potato skin, cut them in thin slices (long), cut two to three pieces of capsicum, cut two pieces of onions, cut (long)two pieces of red tomatoes, grate some cheese.

Put all the ingredients, except the capsicum, into a pot, pour some water just to cover the ingredients, put some edible oil, and boil them. When the potato is almost cooked put the capsicum and add salt and boil it until it is cooked. It should not be cooked dry.. there should be some gravy... sprinkle some corrainder before your serve... serve yourself when it is very warm... enjoy your dinner with your boyfriend

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Salmon Patties
1 can salmon, bones removed
1 egg, beaten
1/4 onion, minced
1/2 sleeve saltines, crushed fine
1/2 tsp seasoning salt, garlic salt or cajun seasoning

In bowl, combine all ingredients, mixing well. Form into patties and fry in oiled skillet.



Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro

Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.


CREAMY CUCUMBER SALAD
3-4 cucumbers, peeled and sliced
1/2 red onion, sliced thin
1-2 tomatoes, diced (optional)
1-1 1/2 cups Hidden Valley Ranch or Cucumber Ranch dressing

In large bowl, combine all ingredients, tossing to coat the vegetables. Place in refrigerator and chill before serving.


BLOOD ORANGE SORBET
1 cup water
1/2 cup sugar
2 cups blood orange juice


In a saucepan over medium-high heat, bring water and sugar to a simmer and simmer for 2 minutes to dissolve the sugar. Remove from the heat and cool. Stir in the juice and taste for sweetness. Make the sorbetto according to the manufacturer's instructions for your ice cream maker. Or pour the mixture into a shallow dish and place it into the freezer for 1 hour. Break up the ice particles with a fork every hour until a smooth, frozen consistency is achieved.

Cook pasta if he likes pasta. Pasta can be healthy if you use natural ingredients like fresh tomatos and lean meats.

Cook pasta & add lightly fried vegetables like babycorn, broccoli,carrots, peas etc. & add sauted tomatoes & avoid chicken/meat if he doesnt eat them.

So use rice pasta (Tinkyada is a good brand) so he get's pasta and you still cook healthy.

Chicken Risotto

* 4 boneless, chicken breasts
* 3 Tbsp. olive oil
* 1/2 tsp. salt
* 1/8 tsp. pepper
* 1 onion, finely chopped
* 3 cloves gbarlic, minced
* 2 cups uncooked regular long grain rice
* 4 cups chicken broth
* 1 cup grated Parmesan cheese
* 2 Tbsp. butter

PREPARATION:
Cut chicken breasts into 1-1/2" pieces and sprinkle with salt and pepper. In heavy saucepan, heat olive oil over medium heat. Add onion and garlic, and cook for 5 minutes until tender. Add chicken pieces, and cook and stir until chicken begins to brown, about 3 minutes.dd rice, and stir to coat.

Add 1 cup chicken broth, and cook until liquid is reduced, stirring frequently. Continue to add chicken broth to keep rice covered, stirring frequently. Cook about 25 minutes until rice is tender. Add cheese and butter just before serving and stir to melt.
