I want to make sushi, and the recipe states that I need to use Japanese rice. I know not to use American rice; the confusion comes from whether I should use sticky rice (used in Chinese cooking to make lo mei fan in dim sum) or just regular, non-glutinous Asian rice. The recipe site I visited referred to Japanese rice as sticky rice, so now I'm confused. :/

Use Nishiki Rice. It is a short grain rice (sticky more gluten)that goes well with all types of Sushi. In Japan they often use a higher grade premium rice (much more sticky and higher gluten protein)you can find in oriental markets. It is expensive, about $10.00 for 5 lbs bag. This rice is also used for mochi making. It is a whiter and more round grain than most. Long grain or Jasmine type rice will not work well for Sushi making. It will not absorb rice wine vinegar well as the short grain rice.

The sushi rice and sticky rice are most likely the same thing (or at least close enough... there are more than one variety of 'sticky' rice). Sushi rice has a higher starch content than standard white rice (like Uncle Ben's) which makes it stickier, and perfect for sushi or rice cakes.

What you need to do is go to the market in the same ile as the rice, you'll see paper bags very well sealed, it is very well stated "Sushi Rice". I recommend that you also buy a bottle of Rice Vinegar, it should be in the same ile. Make SURE that you "LIGHT" not "LITE" Soy sauce to pour on your "Sushi". "LIGHT" means that it's lower in SALT (sodium) about 45% lower, while "LITE" means that it's lower in Flavour, no good when it comes to asian cuisine.

Japanese rice is Japanese rice.
It is also different from other Asian rice.

Boy, am I confused. I did not know that there was different kinds of rice! I thought it was all the same. I buy minute rice. Sorry!

Use short grain white rice. Cal-rose or Nishiki is good.

no such thing, rice is rice. Japanese though steam theirs until it is gummy.
