How To: Fruit Sorbet in 3 Easy Steps

Step 1: Make the basic sugar syrup
Combine 2/3 cup of superfine sugar with 1 cup of water in a saucepan. Stir over low heat until sugar is dissolved. Increase heat and bring to a boil; boil 1 minute. Remove from heat and cool completely.
Step 2: Make the fruit purée in a food processor or blender
For a Raspberry Sorbet: Purée 23 oz. raspberries with 1/4 cup lime juice.
For a Peach Sorbet: Purée 1-3/4 lb. chopped peach flesh with 1/3 cup lemon juice.
For a Mango Sorbet: Purée 2 lbs. chopped mango flesh with 1/2 cup lime juice.
Add the purée of your choice to the cooled sugar syrup and stir to combine.
Step 3: Place the purée/sugar mixture into an ice-cream maker and freeze according to manfacturer's instructions.

Don't Have an Ice Cream Maker? Follow steps 1 & 2 above, then:
Place the purée/sugar syrup in a metal bowl or cake pan and freeze for 1 hour. Remove from freezer and beat with an electric mixer or whisk; return to the freezer. Repeat at hourly intervals 3 more times.

Melon Sorbet

1 pound, 5 ounces diced watermelon, muskmelon or honeydew
3 tablespoons freshly squeezed lemon juice
2 tablespoons vodka
9 ounces sugar, approximately 1 1/4 cups
Place the melon in the bowl of a food processor and process until smooth. Add the lemon juice, vodka, and sugar and process for another 30 seconds. Place the mixture into the refrigerator until the mixture reaches 40 degrees F; depending on the temperature of your ingredients and refrigerator, this could take 30 minutes to 1 hour.
Pour the chilled mixture into the bowl of an ice cream maker and process according to manufacturer's directions. Transfer the sorbet to an airtight container and place in the freezer for 3 to 4 hours before serving.

Easy Melon Sorbet


Enjoy this frozen fruit dessert without a lot of bother or even an ice-cream maker. All you need are a few fresh melons and a food processor. First cube melon and freeze in a food-storage bag. When you’re ready to make sorbet, place frozen melon in the food processor, and purée. You may need to add water to smooth. Add sugar to taste, and purée again. Serve immediately, or store in the freezer in an airtight container up to 2 weeks.

This is a recipe for melon sorbet

Melon Sorbet

2 cups sugar
1 cup water
4 cups coarsely chopped melon
juice of1/2 lemon -- (about 1 tablespoon)

Combine the sugar and water in a small saucepan over medium heat. Cook for about 5 minutes, stirring often, until the sugar has dissolved and a thin syrup has formed. Set aside to cool. When the syrup has cooled, combine it with the melon and lemon juice in a food processor or blender and coarsely puree. Freeze in an ice-cream maker, following manufacturer's instructions. Pack tightly into a 1-quart plastic container, seal, and store in the freezer until ready to use.


You can substitute the melon for any fruit of your choice.

1 medium cantaloupe or other melon, seeded
1 cup simple syrup (recipe follows)
2 tablespoons fresh lemon juice
fresh berries for garnish

Cut the ripe cantaloupe fresh into chunks and puree them in a food
processor to measure about 3 cups. Stir in the syrup and lemon
juice. Taste carefully. If the melon is not fully ripe, you may
want to add a little more syrup. Cover and freeze the fruit puree
in ice cube trays [we needed 2.5 trays worth].

When frozen, place several cubes at a time into a food processor and
puree until smooth. Process as many cubes as you want and enjoy!
[One tray's worth of cubes was about 2 servings].


Simple Syrup

2/3 cup water
2/3 cup sugar
2 tablespoons lemon juice

Put the water and sugar in a pot and bring to a boil. Lower the
heat, cover and cook at a gentle boil for 4 to 5 minutes. Make
sure the sugar is completely dissolved. Add the lemon juice and
let cool. Use in above recipe. Makes about 1 cup.
