when u bake u use the oven and it is a dry heat and consistent. when u broil u use the bottom part of the oven where the flame is right on top of the food and the heat is hotter and it varies, it will also brown or burn food faster

Broil is more direct and hotter flame which is on top of the dish. Bake is lower temp and it "comforts" the dish.
