Yes, you should use herbs. However, children usually take time to become accustomed to new flavors, so be sparing at first. Using herbs is an especially good way to reduce dependence on salt for flavor. My mother-in-law rarely used any seasonings other than salt and pepper and my husband once thought that foods which weren't salty had no flavor. Now he has grown to appreciate herbs, spices, and foods' natural flavors; he seldom uses salt more than a few times a month. Once your children accept the new flavors in their meals, they might enjoy trying to chew on a leaf if you have fresh herbs.
