I can't find in the bible where it says something about blood, I had heard that it wrong if you don't cook the blood out of your meat...

So if you are Jewish then yeah you have a problem, but if you are following Christianity they you dont really have to worry about it because we are not bound by the OT law. The reason for this was because God was trying to protect people from diseases and such when they got all thier meat from the basically the wild. We know now how hot to cook meat to get rid of the bacteria etc... so if you like it a little rare go right ahead. But I would still avoid raw meat, it tends to make you sick.

As for fish, it is okay to bring them in whole and then fillet them later. It is okay to give blood for a blood test because it is disposed of after the test is over.
