Here is a recipe that I created about 30 years ago. It's easy, cheap, & absolutely delicious! Hope you try it, because I know you'll enjoy it like everyone else I've given the recipe to!

DONNA’S CORNBREAD SURPRISE

3 lb. ground chuck
1 lg. onion, chopped
1 sm. bottle barbecue sauce
salt & pepper, to taste
8 to 10 slices American cheese
2 boxes Jiffy Cornbread Mix
2 eggs
1/2 c. milk

Brown ground chuck & onion in skillet, add barbecue sauce, salt & pepper, & simmer for about 5 minutes. Spoon meat mixture into 9x13” pan. Layer with cheese. Mix cornbread mix according to directions, & spoon over the top of the cheese. Place in oven & bake according to cornbread directions on box. Cool for 10 minutes, cut into squares, & serve with mashed potatoes & tossed salad.

Note: This recipe was created out of necessity one night when we returned home empty handed from a fishing trip. Our small town, at that time, rolled up the sidewalks at 5 p.m., so the grocery store was closed. There wasn't much in the fridge, & I had to fix supper for my husband & I & our 4 (at the time) grade-school age children. They always ate like they were starving, so they weren’t being very patient. I scrounged up the above ingredients from the fridge & pantry, & a recipe developed that my family (& others) frequently requested. Great to take to church suppers, picnics, etc. Also, good cold. What more can you ask of a recipe?!

Mango Chicken Stir-fry

Ingredients:
3 boneless, skinless chicken breasts, cubed
1 red onion, chopped
2 red bell peppers, cubed
2 mangos, peeled and cubed
1 8 oz. can crushed pineapple
1/2 tsp. crushed red pepper
1 6 oz. can pineapple juice
1 tsp. chili sauce (such as Sriracha)
3 T soy sauce
1 T honey (optional)
6 T water
3 T rice vinegar
1 1/2 T cornstarch dissolved in warm water
Chopped cilantro, for garnish
Directions:
Heat a little oil in wok or large frying pan.
Add chicken and cook until the outsides are white.
Add red onion and cook 1 min. (until slightly soft)
Add red bell pepper and cook 30 sec.
Add mango, crushed pineapple and crushed red pepper, and cook, stirring, 1 minute.
Add next 4 ingredients (pineapple juice through rice vinegar). Stir thoroughly, then cover and simmer for 10-12 minutes.
Add cornstarch-water and bring back to a simmer, and cook 1 min. or until sauce thickens.
Serve over steamed white rice.

Use a simple yellow box cake, bake as ususal. Let the cake cool.
Poke many holes in the cooled cake with the end of a wooden spoon. Make chocolate pudding as directed on the box. Pour the pudding over the cake and chill. Keep the cake in the refridge.

Everybody LOVES this easy one. Especially when it's hot.

Just buy a good cookbook, one that'll teach you the terms: saute, fry, braise, roast, etc. I like Joy of Cooking or Fannie Farmer. Read and practice. I truly believe if you can read, you can cook. That's mostly how I learned, and I get compliments all the time.

Zesty Hamburgers
2 pounds lean ground beef
2 teaspoons seasoned salt
1 1/2 teaspoons seasoned pepper
4 tablespoons butter or margarine
2 tablespoons vegetable oil
2 tablespoons prepared mustard
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
1/4 cup chopped fresh parsley
Gently mix ground beef with seasoned salt and pepper. Shape into 6 large hamburgers about 1 inch thick. In a heavy skillet, melt 2 tablespoons of butter or margarine; remove from heat; blend in mustard and oil. Return to heat. Sauté burgers over medium heat for about 5 to 6 minutes on each side, or until done to your liking. Remove and keep hot. Into pan drippings in skillet, stir lemon juice, Worcestershire sauce, and remaining 2 tablespoons of butter or margarine. Stir in chopped parsley. Spoon mixture over burgers. Serve hamburgers on buns or as hamburger steaks on thick toasted slices of good bakery bread.
Makes 6 large hamburgers

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.


BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

yes i'm am a teenager though but my my mom tried it and she like it! It's Banana whip pudding:
1/2 cup of sugur
half a stick of melted butter
2 teaspoons of vanilla exctract
6 cut up bananas
1 cup milk for easy stiring
