ingredients:
1/3 cup balsamic vinegar, plus 2 tablespoons
1 bunch arugula, washed, stems picked
1/4 cup pumpkin seeds, salted
Coarse salt, to taste
Freshly ground pepper, to taste
Directions
Heat 1/3 cup balsamic vinegar in small saucepan over medium heat. Reduce the vinegar in half, about 4 to 5 minutes. Let cool, and reserve for garnish. Place the arugula in a bowl, and toss with 2 tablespoons vinegar and half of the pumpkin seeds.
Season with salt and pepper.

If it doesn't have anchovies, it ain't Caesar. How many times you order a Caesar salad and become disappointed once you eat it. Most restaurants try to give you a cheap version of this delicious salad dressing. Now you can make your own at home. If you do not like anchovies, don't add the whole anchovies at the end but still use a few when making the dressing.
Ingredients:
1 Romaine lettuce
10 capers
3 garlic cloves
1 can of anchovies in olive oil
1 tbs wine vinegar
4 tbs virgin olive oil
1/4 ts lemon juice
HP sauce
1/2 tsp Dijon mustard
1 egg yolk
8 tbs parmesan cheese
Croutons (if you like them)
1 oz Cognac
Tabasco sauce
1/2 ts salt
1 ts pepper
Wash the lettuce and brake it apart, then drain it.
Use a garlic press to mash the garlic or simply smash it the best you can
Put the salt, pepper, half of the anchovies, garlic and capers in a wooden bowl
Press with a wooden spoon and mix well until you get a paste
Add the lemon juice, 3 dashes of HP sauce, 3 dashes or Tabasco sauce, Cognac and mustard and mix well into the paste
Add the olive oil and vinegar, mix well again
Just before serving, add the egg yolk and mix the dressing again
Add the lettuce and mix again
Sprinkle parmesan cheese top and drained anchovies.
Tips:
You should really use a wooden bowl if you have one, as well as wooden spoons to prepare this salad.
The easiest and fastest way to peel garlic is to wrap it in rubber, and roll it back and forth a few times. We use a rubber husband, it takes us 2 seconds to peel a garlic clove.
You are welcome to add cold pieces of chicken if you want to make a whole meal out of this.

Mom’s Caesar Salad (for 2-3 people)
Inner ribs of one Romaine Lettuce
2 large cloves garlic
1/4 teaspoon coarse salt
1/2 teaspoon capers (not the juice - just the capers)
1 anchovy fillet
1/4 teaspoon freshly cracked black pepper
1/8 teaspoon Kean's dry hot mustard
3 drops of Worcestershire sauce
2 drops Tabasco
1 Tablespoons Red Wine Vinegar
4 Tablespoons Olive Oil
2 Tablespoons Lemon juice
1 egg yolk (separated from white - discard white)
4 slices crispy bacon, crumbled
1/4 cup freshly grated Regianno or Parmesan cheese (grate it yourself)
a few curls of Parmesan (use a vegetable peeler)
Seasoned Croutons (homemade or store bought)
In wooden salad bowl, press garlic with a fork and add salt. Continue to mash the garlic until it is a pulp.
Add capers and anchovy fillet to Garlic pulp and mash into a pulp.
Whisk in pepper, mustard, tabasco, and Worcestershire sauce.
Whip in the red wine vinegar then add the oil
and lemon juice. Make sure ingredients are well mixed.
Whip in the egg yolk.
Immediately toss the salad, and add the grated cheese and croutons as you are mixing, along with half the bacon crumbles.Serve in wooden bowls, and top with remaining bacon and cheese curls. You can add a lemon wedge and some more cracked pepper on the top.

Caeser Salad
1 head romaine lettuce, shredded with ribs removed
1 egg yolk
1 anchovy
2 heaping teaspoons Dijon mustard
5-10 drops Worcestershire sauce
5 tablespoons garlic olive oil
2 tablespoons lemon juice
1/4 cup parmesan cheese (optional)
salt and pepper to taste
In large bowl mix all the ingredients except the lettuce. Stir
briskly. When thoroughly blended, mix in the romain lettuce. Serve
immediately, topped with toasted croutons.
Note: It is okay to make the dressing ahead of time, however be
sure to refrigerate it. Allow to come to room temperature before
using. If the dressing sits for more than anbout 5 minutes, it will
separate, so be sure to stir again before adding lettuce.

Here is the ceasers salad dressing:-
1 tsp. salt
3 eggs
1 1/2 tsp. sugar
3/4 tsp. dry mustard
3 tsp. lemon juice
1 tsp. Parmesan cheese
4-6 cloves crushed garlic
6 tsp. wine vinegar
1 c. plus 2 tbsp. oil
6 drops Tabasco sauce
6 drops Worcestershire sauce
3 tbsp. olive oil
Mix in blender and refrigerate. When serving salad add anchovies to salad. Add to taste to salad. Excellent, keeps well.
Though you have not asked for it, this is how I make the salad.
1 lg. head romaine lettuce
2 c. croutons
8 bacon slices, ( though I do use chicken sometimes too)
1/2 c. Parmesan cheese
