This depends on the degree of difficulty you are comfortable with. A great healthy family cookbook, not too fancy, is "The Art of Cooking for the Diabetic." Fancier is James Beard's "A Fork in the Road".

I have two that I use all the time and the recipes are wonderful: The Best Light Recipe from the Editors of Cook's Illustrated and Williams-Sonoma's The Essentials of Healthful Eating.

i have the "mayo clinic cookbook" and it has some really yummy, healthy recipes. i know... the name makes you think of hospitals and hospitals don't have good food, but i'd highly recommend it. the cookbook contains recipes for a balanced meal and covers different ethnic cuisines too. they used to sell it at williams-sonoma, but i'm sure you could order it from amazon as well.
