vs.
using "__ and __ and __"

is there a grammatical word for using commas, or a grammatical word for using "and" repeatedly?

no, not the animals themselves, i meant the grammatical structure of the sentence
like
x, y, z
as opposed to
x and y and z

The former is known primarily as "serial commas" -- but also known as Oxford commas or Harvard commas.

The latter I would guess is called "serial ands", but I don't know if it has a formal name.

No, its just easier to read and looks better with out too many "ands". (and is a conjunction.)
