The muffins get soft and rubbery after I toast them and add the hollandaise sauce. I have tried buttering them, NOT buttering them, adding a smear of hollandaise rather than butter...grr! Any suggestions are appreciated!

I toast them twice to get them really crisp.

don't put the egg on till last minute
don't the sauce on til last minute
do toast you bread
do make sure the egg is pretty dry before you put it on the egg

just put them together at the last minute. muffin, canadian bacon, egg, holandaise. they need to soften a little.
