Cumbrian. From the English Lake District, bought from a local butcher, not a supermarket. Nothing fancy but you can't beat it.

Far more plebeian than Venison and Chestnut, my favorite is a garlic and sage sausage made by a tiny sausage factory in MA

I havnt had a decent sausage in ages. the crap that you get in the supermarkets are not worth eating . however I did find a small butchers 8 sausages £3. twisting bugger, I cant afford prices like that. I hope yours were more reasonably priced , and you enjoyed them.

There is a small butcher shop in Denver that makes their own sausage. One of my favorites is Syracusa Florentine. It is pork based with spinach, pine nuts, and many herbs and spices.

sounds great, where is your butcher? There are no local butchers where I live, so we miss out on so many good things!
I like pork and leek, or pork and apple, but the pancetta and parmesan are also really tasty.

there have to be numerious type but it all basically comes down to the main ingredient is ground pork with sausage seasoning.......then there are alot os different meats ...buffalo..elk..venison...beef...bacon...turkey...added and seasoning ex..sage...hot pepper.and even maple flavoring...my favorite would depend on what i was using it for or what i was eating with it

it has to be the good old Lincolnshire sausage. as for a weird and wacky sausage, pheasant and cognac is pretty good
