The easiest way to convert the signals is with a standard converter box. I have found a few online for you:

All of them appear to be pretty similar, and are all pretty affordable as well (Under 20 dollars for two of them)

However something to keep in mind; Toslink optical digital audio and Coaxial digital audio are of identical quality, so there really isn’t a reason to convert them if you have both types of input available to you. If not, then a box similar to this would be a good choice.
