Make yourself a delicious bean spread for your sourdough sandwich. Use some cooked white (Navy) beans and blend until they are a nice, solid paste. Add black pepper to give it a bit of a zing. Add curry to give it a Middle Eastern taste. Add some cilantro, comino and coriander to give it a nice Mexican taste. Add some oregano and garlic to make a great Italian sandwich spread.
With your bean spread sourdough sandwich, include an organic red delicious apple and some organic carrot sticks. You could even include some blue corn chips. Alternating the fruits and veggies and chips with different flavors of the bean spread, you will have countless variety in your daily lunch. Tomorrow, for example, I will make myself a vegan "Reuben" sandwich...bean spread with some paprika and some smoke flavoring with vegan provolone cheese and sauerkraut on rye. I'll grill this sandwich until golden on each side with some vegan margarine. I'll take along some frozen wild blueberries and some carrot sticks. This is a typical lunch I will pack myself.
The varieties and tastes are endless and the vegan health benefits will be many!

Peanut butter an apples they go good together ,celery ,oranges,grapes,banana's
tortilla wrapped around meat cheese and apple sauce ,and many other things that is easy to pack.
