The texture does get somewhat ruined when freezing. I usually freeze leftover cheese, shredding it first, and then I use it in casseroles, etc. so that it melts anyway, and so then the texture change doesn't matter.

Most cheeses don't freeze well. Test freeze a bit overnight and then thaw it out and see what it's like

if it is any hard cheese you can grate it and freeze it for up to two month. If it is soft cheese I would not advice to freeze it ,because it breaks in little chunks and looses it's flavor.

I have found it keeps better in the freezer if it is vacuum sealed and then frozen. I have kept cheese frozen for over a year and it was not soggy nor did it taste funny.

i dont think thats a good idea b/c if you want to eat it later on you have to wait for it to melt and that just makes the cheese soggy and gross like

I freeze chees and have never had a problem, but usually use it within a couple of months.

i keep it in there for over a year, its frozen..nothing can get to it.
it doesnt make the cheese soggy.
(i'm talking about the shredded cheese in the bag)
