Blueish tint, doesnt seem like a good thing to eat.

My garlic turned that way once, i just trashed it.. Dont trust anything of an unnatural color, unless you added coloring or something

Dang - you like the hot stuff & 25 quarts - what are you going into business?? Let's see - garlic is beige - hot peppers are red and your's come out kind of blue? Eat'em and find out and if your not back on this site in like a week, we'll know they weren't any good, that's all I can think of. Good luck.

Under unfavorable curing and storage conditions the color of the white garlic-bulbs cores may darken due to certain biochemical reactions. It can affect the taste, if not the safety. I am afraid you may have to discard them.

Yes, it's safe to eat. It's just a reaction to the canning.
