Grape Salad

2 C red seedless grapes (1 C cut in ½)
¼ C chopped pecan
¼ C crumbled blue cheese
¼ C olive oil
¼ C chopped parsley
½ tsp salt
½ tsp pepper
½ tsp chili powder
½ tsp cinnamon

Cut 1 cup of red seedless grapes and place in bowl with 1 cup whole red seedless grapes. In a separate bowl combine the oil and seasonings. After that is thoroughly mixed, add the chopped pecan and parsley, after that is mixed place into the bowl containing the grapes and gently mix. Last, gently fold in the cheese, cover and refrigerate at least 2 hours… overnight is best. This gives time for the flavors to infuse in the oil and time for the pecan to soften up a bit, but 2 hours is the minimum. Serve over a small bed of baby greens.

Twice-baked potatoes (loaded) This is so easy too and gooood!

You'll need one huge potato per serving, a veggie of your choice (I like broccoli and cauliflower), shredded cheese, milk, butter, and ranch dressing.

Steam your veggie of choice. Then bake the potatoes in the microwave. Let them cool, cut down the center, while keeping the skin intact otherwise, and scrape the insides into a bowl. Set the skins aside. Mash the potatoes up while still hot, add a little milk, and a few spoons of butter, and about 1/4 cup ranch dressing. Then you have mashed potatoes.

Spoon the mashed potatoes back into the skins, top with your steamed veggies and then the shredded cheese. Place back in the microwave, and heat until the cheese is melted.

This may seem like a 'blah' recipe...but it is surprisingly good....and with a large potato, it's just like a meal. You could also serve a smaller potato as a perfect side for a grilled soy patty topped with mushroom gravy.

Veggie Loaf

ingredients:

1 cup tvp
1 cup warm water
½ cup grated raw potatoes
½ cup grated raw carrots
½ cup canned peas, drained
2 eggs, beaten
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp seasoned salt


Mix tvp with water in a large bowl, and let set until liquid is absorbed.



Add remaining ingredients and mix well.



Place mixture in a loaf pan and bake at 375°F for 30 to 45 minutes, or until done.

Aloo Gobi (Cauliflower and Potatoes)


•1 medium Cauliflower
•2 medium Potatoes
•1 Onion
•1 Tomato
•1 clove Garlic
•1" piece Ginger
•pinch Turmeric
•to taste Salt
•to taste Pepper
•to taste Garam Masala



Make Masala with onion, garlic, ginger, and tomatoes. Add turmeric and spices.
Break the cauliflower in flowerettes and cut the potatoes into cubes (8 pieces each).
Add both to Masala and lower heat to simmer. Cover the pot until the cauliflower
and potatoes are coated.

Baked Vegetable Stuffing



• 2 carrots, peeled and chopped into small pieces
• 1 celery stalk, finely chopped
• 1 med onion, finely chopped
• 1 zucchini, chopped into small cubes
• 1 cup of mushrooms, chopped into small pieces
• 5 slices of bread with crusts removed, cut into cubes
• 3 Tbl lemon juice
• salt and pepper to taste
• 1/4 cup vegetable stock
• 1/4 cup wine (can use 1/2 cup veg stock if you don't want to use the wine)
• 1/2 tsp sage
• 1/2 tsp thyme
• 2 Tbl fresh parsley, chopped (or 1 Tbl dried)



Combine the first eight ingredients in a casserole dish. Then in a small bowl combine the rest.

Whisk the above together and then poor over the vegtable mixture. Cover and bake about 35 minutes at 350. A baked sweet potato would go great with this.

Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

4 cans of Tomato soup 10 oz
3 cups water
Onions diced
1 can of corn drained 10 oz
1 can of sliced olives drained
4 big handfuls of elbow mac (the big ones)

Cook the mac until done. Drain. Then combine everything else and heat it up and then enjoy.

Try and use a big pot so that you don't have that many dishes to clean later.

Grilled Veg. Sandwich

INGREDIENTS:
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese

DIRECTIONS:
In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.
Preheat the grill for high heat.
Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.
Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer the with vegetables. Enjoy as open faced grilled sandwiches.

Vegan Chili.
2 lg cans of stewed tomatoes
4 cloves garlic
1 lg onion
3 cans red kidney beans
2 can pinto beans
1 tbl spoon chili powder
1 package (6) meatless soy burger patties use your favorite brand

crumble and brown patties with vedgi oil.
add garlic, onion to pan and brown.
Add all other ingredients to lg stew pot mix in patties onion garlic
let simmer for 2-3 hours add any other seasonings you want
and its done YUMMMMMMMMMM!!!
