BANANAS FOSTER (for two)- In a frying pan, 1 tbsp Butter, 3 tbsp Brown sugar and two bananas sliced length wise and halved. Cook on moderate heat adding rum and a pinch of cinnamon until bananas soften and the sauce begins to thicken (Caramelize). Remove from heat and serve over Vanilla ice cream (in large red wine glasses is nice) and serve immediately.

Check out a Betty Crocker or Better Homes and Gardens cook book for what is called a "Rich Pastry Dough" recipe. I add 3 tbs. of cream cheese to that. Refrigerate to harden and then roll out to the size of an average pie crust circle. Spread a 1/2 of a small jar of any fruit jam you like leaving about an inch-2 inch border. Fold over the remaining dough and add more jam if you like w/out 'overflowing'. Bake at 350 till golden. The jam will bubble and thicken during cooking. When cool slice in triangle wedges and enjoy.

Notes:

This is called a Crostata and is a very simple Italian desert.

To dress this up you can also sprinkle pine nuts or slivered almonds on top.

Do not use jelly...it does not work as well as Jam in the sense that jelly gets too liquid when heated.

The final product is kind of like an open face pop tart...only much better.

Like Mikethebeast said - it's difficult to answer without knowing what types of desserts you like, but one of my all time favs is simple and delicious. It's called 'Peanut Butter Pie' and here's what you'll need:

1 - chocolate crumb cookie crust (you can make your own or buy one - Keebler is good, but Oreo is the best)
1/3 cup p-nut butter (I like creamy or u can use chunky if you prefer)
1 - 8oz. pkg cream cheese
1 cup powdered sugar
1 8oz. tub Cool Whip

First mix together p-nut butter, cream cheese and powdered sugar using a hand mixer until smooth, then fold in Cool Whip by hand with a spatula. Pour mixture into the pie crust, cover and refrigerate for about 2 hours until set. Personally, I like to put mine in the freezer and then cut and eat it frozen. Just before serving, you can drizzle some chocolate sauce over it , dust it with cocoa powder or shaved chocolate for a nice presentation. I've made this for get-togethers and family holiday dinners, I never have any left to take home!

Award Winning Soft Chocolate Chip Cookies

INGREDIENTS:
•4 1/2 cups all-purpose flour
•2 teaspoons baking soda
•2 cups butter, softened
•1 1/2 cups packed brown sugar
•1/2 cup white sugar
•2 (3.4 ounce) packages instant vanilla pudding mix
•4 eggs
•2 teaspoons vanilla extract
•4 cups semisweet chocolate chips
•2 cups chopped walnuts (optional)

DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking soda, set aside.
2.In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mixture. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets.
3.Bake for 10 to 12 minutes in the preheated oven. Edges should be golden brown.

This is a super easy dessert that can even be served at brunch!

Mini pineapple upside cakes.

1 can of refrigerator biscuits
1 small can of crushed pineapple drained (reserve juice)
1 stick of melted butter
1/2 cup of brown sugar
cherries (optional)
Muffin pan

Preheat oven by directions on biscuit can.

Melt butter, stir in brown sugar and pineapple. Place a tablespoon of mixture in bottom of each muffin cup - press a cherry in the center (option). Then place a biscuit in each of the muffin cups on top of mixture. Spoon a teaspoon of reserved pineapple juice over the biscuit = then bake. When brown, removed from oven. Place tray over the muffin pan and carefully flip over. The little mini cakes will pop out. You can arrange them in a circle on the tray. They are so easy and sooooo yummy!

* EGGS, 8, with yolks and whites separated
* SUGAR, 1/3 cup
* MASCARPONE, 1 pound
* HEAVY CREAM, 1 cup
* ESPRESSO COFFEE, 2 cups cooled
* BRANDY, 2/3 cup
* LADY FINGERS, 30
* BITTERSWEET CHOCOLATE, 2 ounces grated
* COCOA POWDER, Dutch process, sifted, for garnish

Directions

1. Mix the sugar into the egg yolks, blending well.
2. Add a little Mascarpone at a time to the egg yolk mixture, and mix until smooth. Set aside.
3. In a separate bowl, beat the whipping cream until stiff peaks form. Set this aside as well.
4. In another bowl, beat the egg whites until stiff peaks form.
5. Fold the whipped cream into the egg yolk mixture, then fold in the beaten egg whites.
6. Spread about 1/3 of the cream mixture of a 4-6 quart glass baking dish or serving bowl.
7. Place expresso coffee in a large mixing bowl, and combine with the brandy.
8. Dip a lady finger into the expresso, lay it in baking dish on cream mixture.
9. Top with grated chocolate.
10. Continue in this manner, laying lady fingers side by side to cover the bottom.
11. Place another 1/3 of cream mixture on top of soaked lady fingers.
12. Cover this with another layer of expresso-soaked lady fingers.
13. Top with remaining cream mixture and grated chocolate.
14. Dust final layer with grated chocolate and cocoa powder.
15. Chill 2 hours to set.

Or just a big bowl of green & red grapes & some cut up watermelon & canteloupe...it looks so beautiful & appetizing!

Biscuit Tortoni

INGREDIENTS:
1/2 cup chopped blanched almonds
5 ounces amarettini cookies
3 tablespoons dark rum
3/4 cup semisweet chocolate chips
1 cup heavy cream, chilled
3 tablespoons brandy
1 quart vanilla ice cream, softened

DIRECTIONS:
Preheat oven or toaster oven to 350 degrees F (175 degrees C).
Place chopped almonds on a tray and toast in preheated oven until lightly colored and fragrant, 5 to 8 minutes. Let cool completely.
Crumble the cookies into 1/2 inch pieces by wrapping in a tea towel and tapping lightly with a rolling pin or mallet. Do not crush into small pieces. Place crumbled cookies in a medium bowl and sprinkle with rum. Toss with almonds and chocolate chips. Set aside.
In a large bowl, beat cream with an electric mixer until thickened. Pour in brandy and beat until soft peaks form. Spoon whipped cream over cookie mixture. In whipped cream bowl, now beat ice cream just until softened (with a flat whip, if available). Fold cookie and cream mixture into ice cream. Freeze until serving.
