I always add an extra egg and 1 small box of instant pudding mix (dry) to the batter.

Use cake flour instead of AP. It has a lower protein content, so when you are mixing less gluten will form. Gluten will make your cakes tough.

I don't personally think it's a matter of what you put in, but how you mix. Mix the shortening and sugar thoroughly until it's a nice fluffy mixture, add the eggs and beat until fluffy. don't overmix once the flour is in there; that's what makes it tough.
