We marinate ours for at least a few hours in balsamic vinegar, worchestershire sauce, chopped fresh garlic, olive oil and some salt and pepper. Then we grill them on foil. The marinade makes them so moist and delicious! Something else you could try would be to marinate and grill them and then stuff them with crabmeat or a cheese like seasoned ricotta. You could then broil them for a few minutes in the oven. Just a few ideas!!

HOW TO GRILL PORTOBELLO MUSHROOMS

1. Clean the mushrooms with a vegetable brush under cold running water. Be gentle.
2. Place the mushrooms in a storage container and sprinkle liberally with equal parts balsamic vinegar and olive oil, to coat both sides.
3. Cover the container and shake it to fully coat the mushrooms. Set aside for up to 1 hour.
4. Prepare a grill.
5. Place the mushrooms on the grill, a bit off center from the heat. Cover the grill.
6. Check the mushrooms after 5 minutes and turn them over carefully. Grill the other side for about 5 minutes, until tender in the middle.
7. Let cool slightly and devour with appreciation!

Tips:
Use plastic storage bags in lieu of a storage container. Or just use a plate or bowl large enough to hold the mushrooms.

Accompany the mushrooms with a green salad and roasted potatoes, or use the mushrooms as the base for a mushroom "hamburger." Or use the mushrooms as an accompaniment for grilled meats.

Grilled marinated portobello mushrooms:

In final minute of grilling top with a slice of cheese and finish grilling until melted. Makes a great substitute for a hamburger - just slide it onto a roll and top with tomato, lettuce, etc.

Tasty toppings:
Top mushrooms with a slice of roasted red pepper and a slice of mozzarella cheese - zap for 20 seconds in microwave until the cheese melts slightly.

Portobello mushrooms are typically sold fresh.

Preparation, uses, and tips
Portobello mushrooms are delicious baked or grilled, whole or sliced. They make an excellent meat substitute and are a hearty addition to stir-fry dishes and sauces. When grilling or broiling, lightly brush caps and stems with oil to keep them moist, and season to taste. Grill or broil 4 to 6 inches (10 to 15cm) from heat source for four to six minutes on each side, brushing with oil again once or twice during cooking. The stems are very woody and should be removed and saved for soups and stocks.
