Grandma's Chocolate Cake
Mix together in large bowl:
2 2/3 cup flour
6 Tablespoons cocoa
2 teaspoons salt
2 teaspoons vanilla
2 teaspoons baking soda
2 teaspoons vinegar
2 cups sugar
2 cups water
1 cup oil
Grease Pan and bake at 350 degrees for 45 minutes.
I don't have any frosting recipes, you could try a peanut butter frosting thats what my mom usually makes with this or you can make a cream cheese frosting. This is such a good cake I love eating the mixture though before it's baked, so yummy.

ChocolateCream Cake with a Kahlua Frosting on it.
Chocolate Cream Cake
1 box chocolate cake mix
1 box (3/4 oz. size) instant chocolate pudding
3/4 cup sour cream (lite is fine, or regular)
1/3 cup canola or corn oil
3/4 cup Bailey's Irish Cream (or other cream liqueur)
3 eggs
OR
3/4 cup egg substitute
Mix all ingredients in your mixer. Start on Medium speed and when all is combined, turn the mixer up to High for 2 full minutes. Grease and flour an angel tube pan. Pour the batter in the pan. It will be rather thick and fluffy. Don't be alarmed by the color. It's sort of an odd color when it's unbaked, but it will look like a lovely chocolate color when it's done.
Bake at 350 degrees for 55 minutes. Check with a toothpick to see that it's done. If no crumbs stick, you are set. Let the cake cool on your counter for 15 minutes. While it's cooling you can make the frosting.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Kahlua Frosting
6 tb Butter
1 lb Sifted powdered sugar
3 tb Unsweetened cocoa
3 tb Kahlua
2 tb Hot coffee
Cream butter and sugar. Add cocoa, Kahlua and hot coffee. Beat until smooth.. Decorate with shaved chocolate, if desired.
caramelised apple wreath
4 eggs
1/2 lb sugar
1/2 lb chilled butter, sliced
1 lb flour
1 teaspoon baking powder
6-8 apples, about macintosh size
raisins
cinnamon
brown sugar
butter
small sauce pan
bundt pan
preheat oven to 175 celsius/ 340 fahrenheit.
peel, core and slice apples. heat butter in the saucepan, add apples slices, raisins and cinnamon and brown sugat to taste. stirfry for a minute or two, reduce heat to about half and cover. while apples are roasting, make the dough:
crack eggs into mixing bowl, whisk while adding sugar until frothy. go on whisking while adding butter slice by slice. when butter is dissolved in the dough, add flour and baking powder.
grease baking pan, line with brown sugar, dump in the contents of the saucepan. pour dough on top. stick pan into oven, bake for about 45 minutes. cake is done when a stick stuck into the cake comes out dry. when cake is done, leave it in the open oven for about ten minutes before taking it out or it might collapse. serve with cream, custard or on its own. it's way easier than it sounds, and SO good! :-)
KRISPY's CARROT CAKE:
2 cups sugar
1 1/2 cups Crisco oil
4 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated raw carrots
1 1/2 cups chopped walnuts
Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before icing.
CREAM CHEESE FROSTING:
1 (8 ounces) package cream cheese, softened
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1 Tablespoon milk
Cream all ingredients together until spreading consistency.
=================================
For a prettier presentation, make or purchase tubes of marzipan (this can be found at most grocery stores) and design some carrot decorations for the top...
MARZIPAN CANDY:
1 can (8 oz.) can almond paste
1 1/2 Tablespoon light corn syrup
1 1/3 cup sifted confectioners' sugar
liquid food colorings
Knead almond paste by hand in a medium bowl. Add corn syrup, and knead into almond paste. Gradually knead in sugar. Cover with plastic wrap, and refrigerate in airtight container until ready to shape. Tint marzipan by kneading in liquid food coloring, and then shape as desired. Makes about 3/4 pound candy or enough to shape about 3 dozen small fruits
You won't have time for the glaze....don't need to glaze decorations anyways...
Glaze
2 Tablespoon light corn syrup
1/4 cup water
Combine corn syrup and water in a saucepan, mixing well. Bring to a boil, stirring until syrup dissolves.
Brush decorations with glaze, if desired to achieve a shinier surface. Let dry overnight on waxed paper; then refrigerate in an airtight container.
==================================
CARROTS: Roll orange-colored marzipan into a ball the size of a large pea, then roll one side of the ball into the tapered shape of a carrot. With a toothpick, poke a hole in the larger end for the green carrot tops. Make the tops by rolling one tiny piece of green marzipan into three tiny, thin strings. Pinch them together at one end and insert that end into the hole at the top of the carrot. If the stem wobbles a bit, use a toothpick to push the carrot top snugly around the stem.
