Keep stirring it,,, that's the main point in making rue. You can stop when you think is brown enough.

I have found it cooks best in a black iron skillet over medium high heat stirring constantly. It takes a long time but will get to the color you want without scorching.

Stirring constantly; don't leave it for a second. Plus, use real butter (the solids in butter get darker than margarine or oil).
