Spanish Omelette Recipe
Eggs are a big part of the Spanish diet and here is a simple, traditional way to enjoy them! For a little extra flavor, serve the omelettes with green olives.
Spanish Omelette
Ingredients:
3 tblsp olive oil
3 large potatoes, peeled and thinly sliced
3 large eggs
1 onion, peeled and chopped
Salt (as desired)
Method:
Crack the eggs into a large bowl and whisk with a fork. Add desired slat.
Heat oil in a medium, light-weight frying pan.
Add the potato and fry for about 2 minutes. Add the onion in with the potato.
Continue cooking the potato/onion mixture until they start to brown around the edges.
Pour the eggs over the potatoes, gently poking the potatoes so that the eggs can seep in.
Fry over low heat, gently shaking the pan to loosen the omelette from the bottom.
As the egg begins to firm, gently flip the omelette onto the other side.
Continue shaking the pan to prevent it from sticking.
Cook for about 1 minute and then remove from the pan.
Let the omelette sit for about 5 minutes before serving.
The middle should be slightly runny.

Sorry but the Spanish omelet doesn't have jalapenos if you are talking about an omelet from Spain.
what you need to do is:
1) cook onions and the bell peppers first, then add chopped potatoes in olive oil
2) once the potatoes are cooked, put the whole thing that you cooked inside another pan, just so that the oil doesn't get in.
3) add egg to the potatoes and leave it that way until the egg cooks.
Another thing you can do, instead of adding bell peppers, you can also add artichokes, spinach or mushrooms. Really good! This type of omelet is also called "tortilla espanola"

This is nothing like as complicated as others are saying. There are variations but the basic Spanish Omelettes, the ones they actually make in Spain (tortilla de patatas) are:
Potatoes, chipped as small as you can,
Eggs, whipped
and even this is optional but pretty essential in my opinion, Onions, also diced into small bits,
Salt to taste
Anything else is a variation,
Just fry the potatoes and onions until they're soft; whip the eggs in a separate container; add the soft potatoes and onions to the eggs, having drained off the oil; mix it up; pour it back into the hot frying pan (covered with a little bit of oil); the egg will set immediately so turn down to a weak flame to cook and then flip and repeat.

I have chucked all sorts of things in such as cooked chicken or prawns, mushrooms and or potato as well as the basics - red and green peppers, onion. For a change, to finish it off, grate some cheese on top and brown the omelette under the grill.

The potato has to be boiled first, then sliced up. When it's still hot, mix it with whisked eggs and thinly sliced onion. Put this in a frying pan, then cover and keep on a low heat until it's cooked through.

Onions, tomatoes, potatoes and garlic and obviously herbs and spices of your choice. The potatoes should be cubed and fried up with the garlic peices, and onions. Then you beat the egg and add it to the pan and let it cook through. Serve in pieces instead of typical folded over omellette style.

Usually peppers and onions, sometimes tomatoes, and then a mexican style cheese like pepper jack or even just some of that pre-shredded stuff with spices would work well. In a pinch, put some of that, and some salsa! Yummy!
