I have a lot of veggies in the fridge and I need some ideas, Thanks.

Tomatos-- Make a salad with garden ripe toms , olive oil garlic , vinegar, mint , basil and lemon juice. A bit of honey to taste. Boil a pasta of your choice and when done , drain and pour over salad. Pasta primavera supreme ! Buona appettito!

Fresh asparagus, cooked in a way I invented:

1. Select fresh asparagus spears, the smaller the better. Rinse, trim the root ends off, pat dry, and place in a flat baking dish (we use the same pan we do for making brownies, it's the perfect size).

2. Squeeze the juice of one small to medium lemon over the asparagus spears, followed by a few tablespoons of extra-virgin olive oil. Add salt, minced garlic, and a fresh (or dried) herb (thyme is a favorite). Toss to coat evenly; let marinate for approximately 30 minutes. (Or long enough to get the barbecue started!)

3. To cook: the BEST way to do this is on the barbecue, right over the coals. (Just make sure the asparagus doesn't slip between the spaces in the grill!) They're almost as good cooked on a stove-top grill, and in a pinch, you can saute them over high heat in a large flat skillet, but my favorite is over charcoal. Cook them just till there are a few black lines across the spears, but make sure they're still crisp -- overcooked asparagus is a great sadness.

I also like to do nearly the same thing with zucchini (courgettes) -- slice them lengthwise into quarter-inch (6mm) slices, then marinate in lemon, oil and garlic as above. Cook the same way. This is literally the only way my oldest daughter likes zucchini; she says it tastes like metal any other way, but she'll have seconds if I cook it this way. You could use other small squash (yellow squash, patty-pan or summer squash, etc.), and I suspect that doing this with eggplant would be superb, too.

I love cooked broccoli. I love raw cucumber with lime squeezed on it. Just make a huge salad with lots of the veggies in it. Or cook some pasta and make a minestrone soup! That's what I'm eating now. Mmmm.

Broccoli!
Put a pan of olive oil to heat up with some garlic (1 head), when the garlic is browned, add the broccoli and red pepper flakes to taste. Yummy! Even better when thrown in pasta with garlic sauce.

It's a toss-up between steamed asparagus and potatoes sauteed with rosemary (cube and boil until tender, then toss with butter and oil, then sprinkle with fresh chopped rosemary and sea salt).
