A good rule of thumb...If you won't drink it, don't cook with it. When you cook with wine, you concentrate the flavor through the cooking process. So if you cook with nasty wine, your food will taste like concentrated nasty wine.
And if it has been sitting on the counter for 3 months after it was opened, there is a really good chance that there is mold growing in that bottle that could make people sick, throw it away!
If you use wine to cook, but you don't use all of it, pour the rest of it into ice cube trays and freeze it. Then pop out the cubes and put them in a freezer bag, then back into the freezer. Next time you need wine to cook with, each cube measures about 1/4 cup. Just throw how ever many you need into the pot!

I buy red and white wine to use in cooking only and I use it until it is empty which take at least a couple of months,always does works for me.

Taste it.
If it's not good enough to drink. it's not good enough to cook with.
Pour your left over wine in a saucepan, an simmer till reduced to 1/2 cup. Add to your vinegar bottle.

Wine doesn't spoil or otherwise go bad. Unless you think someone might have tampered with it, it will be just as fine as when you opened it.
