I'm going to make a stuffed flouder dish which is pretty much flounder wrapped around a spinach/onion/garlic/parsley filling. Then it is drenched with a cheddar cheese white wine sauce. With some rice underneath the fish to soak up the extra sauce.

I want to make it elegant, but I'm not good with that!

Serve with white wine? Would rice and fish be enough?

You could serve a side salad with it if youre concerned about it not being enough. It sounds elegant if you plate it before you serve it.

Stuffing, preferably homemade. Otherwise, how about some steamed asparagus with hollandaise and a nice salad with feta and balsamic dressing?
