What we do (making pies, etc.) is put the apple slices in a big bowl of icewater to which a small amount of lemon juice has been added. When it's time to put them into the pie/dumpling/whatever, just drain the water, pat the apples dry lightly with a paper towel, and use normally.

We also enjoy a side dish, especially with roast pork or pork chops, of sauteed apples: Slice apples into thin (1/2", 12mm) slices. In a medium saute pan or skillet, melt about two tablespoons of butter over medium-high heat till the foam subsides and the butter just begins to change color. Add the apples (after draining and drying), and let them cook in the butter till they are cooked through and just turning golden-brown at the edges. As an alternative, we sometimes add a little tarragon to the apples, the flavor is very good. Serve with pork chops, pork roast, or country-style spare ribs.

1. Get some Ester-C powder off the internet. I think I got mine from MSM-MSM.com. I believe it is a Vitamin C + Calcium vitamin suppliment.
2. Microwave a cup or so of water and mix in as much Ester-C as will fit.
3. Pour the Ester-C mix in a spray bottle.

Now you have an effective anti-browning spray for apples! Unlike lemon juice, it won't give your apple a weird taste.

Squeezing a litlte lemon juice over them helps delay this, but won't stop it if they have to be out for a long period of time.
