Be careful with the idea of homemade breads as being a good dessert for someone with diabetes. Even if you substitute the sugar for splenda, which will work by the way, you have processed enriched flour.
Flour for cakes, should be from whole grain or whole wheat or you will be setting up for just as many problems as before. Enriched Flour is going to metabolize just as sugar would. Just be forewarned that all flours are not created equally.
Prevention Magazine has a great group of cookbooks for the diabetic. Many YMCA's are offering diabetic awareness classes and offer recipe ideas for their patrons.
Low carbing became very popular a couple of years ago, and many small stores, even regular grocery stores carry products that are diabetic friendly. You can get many items, not all palatible, but trial and error and you will find what you can live with or without. I am not suggesting a low carb diet, for I think they are just as dangerous as a low fat diet.
Watch the glycemic index on your foods and he should do well.

No Bake Sugar Free Cheesecake INGREDIENTS 1 3/4 cups graham cracker crumbs 1/2 cup butter 1/2 teaspoon ground cinnamon 1 (.6 ounce) package sugar free lemon flavored gelatin 1 cup boiling water 1 (8 ounce) package reduced fat cream cheese 2 teaspoons vanilla extract 1 cup frozen light whipped topping, thawed DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool. Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping. Pour filling into crust. Sprinkle top with graham cracker crumbs. Refrigerate over night.

is dad obeese?? i would encourage him to just get over the sugar craving, and salt too.. Fresh fruit with cottage cheese with very low fat whole grain home made breads are my favorite non-meal snacks.. I also cut out allmost all added salt, and trim all the fat, cutting down to about 4oz of protein food per day.. I use a lot of good tasting herbs spices and addatives. fresh veggies, 2% milk, beans and legumes, whole grain rice and noodles in place of bleached stuff, no white bread , no sweat bread, walking and working out till i sweat, blah,blah,blah,, yes it is a very painful life change.. but it is worth it because it beats the alternative--- dying after a long disability...

pears, peaches and apricots omellete
1. Peel all the fruits and cut them in quarters
2. Fry them together for 1 minute
3. Add orange, pineapple and peach juice and let the fruits soak in the juices.
4. After they soft add some grenadine drops, stir well to give a nice colour and serve hot

I have simply used my traditional recipes but substituted the sugar for Splenda or Stevia. They turn out great!

I found that by using a suger substitute (Like Splenda) you simply use half of the quantity.
If it says 1 cup sugar, i use half a cup of splenda.

make him some shakes with out suger!!! or there is suger free ice cream and then put suger free cookie crums on top!!!
what ever you do DONT give him splenda it cases cancer!!!
