There are a variety of natural family planning methods
The rhythmn method, which I would not recomend, just counts days on the the calender to figure out when to abstain from intercourse. This method assumes a standard cycle every month which is not the case for most women so it is only 75% effective for planning a family.
Women also show signs/symptoms of fertility by monitoring these symptoms and avoiding the days around the appearance of these symptoms you can have a family planning method that is 90+% effective.
Another method is based on monitoring your temperture. By just monitoring your temperture with a special thermometer you can also have method which is about 90+% effective.
If you combine those two methods symptoms and temperture you get a method that is 99% effective or about the same rate as the pill with out all those risky side effects. For most couples depending on the women's cycle this will allow for 250 - 300 days per year where you may have intercourse when not trying to achieve pregnancy..
The Couple to Couple league offers classes around the country where you can learn the 99% effective method, known as the sympto/thermal method. Here is there website http://www.ccli.org/.

I think you are asking for some raunchy answers by asking this question! But seriously, it works like this.
During a woman's menstrual period there are some days before she is ready to be pregnant, some days when her body is ready to conceive, and some days when her body is breaking down the system getting ready to set it up for the next month, so it isnot ready to get pregnant then. So there are days when she could, and days when it is unlikely that she could get pregnant.
The rhythm method tries to keep track of these days by counting from when she has her 'period.' If the couple only has sex on the days when she is unlikely to get pregnant, then she willprobably not get pregnant. This system is not too reliable because some women have very irregular menstrual cycles. So there is an old joke, "what do you call couples who use the rhythm method? " - answer: "Parents."

There is a period of time, about a week, before ovulation when sex is considered relatively risk free, regarding conception. It is a accepted birth control method of the catholics.
Of course there is a corollary:
What do you call a couple that practices rhythm contraception?
Parents.

The rhythm method does not work. I believe the failure rate is 10% or something close. If you don't want to get pregnant, use another method.

The "rythem method" is done when you end up pregnant. This is the least reliable method of birth control, and unless you are tracking your basal tempertature, menstrual cycle, and vaginal secretions VERY closely, you're likely to mess up royally. It only seems to work very well when you WANT to get pregnant.
