I would check both the cooling system fan, which is electric, and the belt. If the engine is warm and idling, it will turn on and off. It is also wired to turn on everytime the a/c compressor cycles, with the hood open you will hear it. If the fan isnt working, it could be any number of things (bad relay, maybe fuse for relay, bad fan or bad pcm computer) maybe a bad wire. If the fan is working, check the water pump belt if you have a 3.3 engine. the water pump is on the drivers side kind of lower down the front. If you have a 3.5 engine, you have nothing to worry about. The timing belt runs the water pump, and if that belt had a problem, the car wouldnt run at all! Email with details if you want more help...

The engine is working harder to power the AC (compresser and fan). Shouldn't be that sensitive though. CHeck your fluid level, and maybe flush your radiator

its possible (likely) that your AC pulley is on the same serpantine belt as your water pump and the belt is loose and so when you switch on the AC and the Pulley kicks in it is casueing too much slack on the water pump pulley and as a result the water pump can not circulate the rad fluid through your engine.....check the belt tension....its a fairly cheap fix (i imagine less than 100 installed)

Your secondary fan isn't coming on when you switch on the A/C. Have it checked out.

most likely the fan motors are not engaging, one or both of them, you may have a blown fuse or a shorted motor blowing the fuse
