I have over a dozen apples, all different, varieties. Usually I would make my favorite apple pie recipe, but one member of my household is allergic to cinnamon.

I tried my normal recipe without cinnamon, but the flavor was not as satisfying. I'd like to get away from pie too.

Have you tried to substitue Nutmeg as a replacement for the cinnamon? If not, try it but do so in a much smaller quantity. Nutmeg is very flavorful.

Here is a recipe without cinnamon, I found it on the internet.

Google recipes that use Cayenne pepper instead of cinnamon. It actually tastes better than cinnamon. No I'm not joking.

Well I tried to Google it and didn't have any luck. It may be a local recipe that's not on the Internet. I don't know the recipe but what I've tried I like a lot better. I'm sure they use a very small amount of pepper.

Cheesecake is the first thing that came to my mind! It does contain dairy, but it is definitely an eggless recipe. I have made this recipe 3 times, and it always comes out beautifully, it tastes soooo good! :) Eggless Blueberry and White Chocolate Baked Cheesecake Adapted from Kurma Dasa's Great Vegetarian Dishes (Serves 10-12) Ingredients For the base: 1/4 cup butter, melted 2 ½ cups digestive biscuits, crushed For the filling: 500g ricotta cheese 500g cream cheese, at room temperature 1/3 cup lemon juice 1 ½ cups caster sugar 1 tbsp cornflour 1 1/3 cups double cream 1 ½ tsps vanilla extract ½ cup white chocolate, melted 1 cup blueberries, dusted with a little plain flour Method for the base: 1. Combine the crushed digestive biscuits with the melted butter and mix thoroughly. 2. Firmly press the mixture into a greased 10 inch springform tin. Method for the filling: 1. Beat together all of the ingredients (excluding the blueberries) until it has thickened. Kurma suggests not to overmix this. 2. Pour ¾ of the mixture on top of the crust and scatter on the blueberries. Pour the rest of the cheese mixture over the blueberries. This method protects the blueberries from burning in the oven and the flour they are dusted in will stop them from sinking to the bottom of the cheesecake during cooking. 3. Bake at 180 degrees Celsius for 1 ¼ hours until set (I left mine for 1 hour because my fan oven cooks things a little quicker). 4. Allow to cool and refrigerate for at least 8 hours. 5. Cut into (extra) large wedges and serve If you only measure in either cups or grams/mls, just type into google something like (for the lemon juice, for example) How much is 1/3 cups in mls? Its 80 mls, by the way :D Oh and I have frozen this recipe and served a week later (defrosted obviously!) and it did still taste lovely, but the biscuit base had lost some of its crunch, so maybe not such a good idea if you aren't keen on soft biccies! :)

Apple Pandowdy

4 apples, cored, peeled, thinly sliced
1/2 cup granulated sugar
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup molasses
1/3 cup hot water
1 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons shortening
4 to 6 tablespoons milk

Arrange sliced apples in a buttered 11x7-inch baking dish. Combine sugar, nutmeg, and salt; sprinkle over the apples. Combine molasses and hot water; stir to blend. Pour molasses mixture over the apples.
Bake apples in preheated 400° oven for about 20 to 30 minutes, until apples are tender.
Meanwhile, make a soft dough. Sift flour with baking powder and salt; cut in shortening until mixture resembles meal. Add milk, mixing with a fork, enough to make a soft dough. Knead lightly for about 10 seconds. Roll dough into a rectangle 1/4 to 1/2-inch thick, to fit over the 11x7-inch pan. Fit the dough over the cooked apple mixture and pierce all over with a fork to let steam escape. Bake at 400° for about 20 minutes longer, or until nicely browned. Serve warm with cream or ice cream.
Serves 8.

Apple Crisp

3 pounds tart apples
2 tablespoons lemon juice
1/2 cup brown sugar
1/2 teaspoon Allspice
1/2 teaspoon nutmeg
1/3 cup all-purpose flour
1/3 cup granulated sugar
1/3 cup rolled oats
4 tablespoons cold butter (1/2 stick)

In another bowl combine flour, sugar and oats.
Cut butter into 8 pieces, and cut butter into flour until mixture looks like crumbs. Stir in nuts. Butter a 10 X 10-inch baking dish. Spread apples in bottom of baking dish then sprinkle with flour mixture. Bake at 375° for 30 to 45 minutes, or until apples are tender and topping is lightly browned. Serve warm or at room temperature.
