Olive oil is the absolute best oil to cook with. You can fry with it and also bake with it. If a cake recipe or any recipe in general calls for oil or butter you can substitute equal portions with olive oil. I do this all the time and everything still tastes great! Olive oil will actually lower your bad cholesterol. Mine was extremely high and I switched to cooking eggs, bread, cake etc.... with olive oil and I lowered my bad cholesterol by 70 points in 6 months which is a big and great difference!

I always use Canola oil (from the rapeseed plant)-- it's very healthy for you because:

1. very low in saturated fat compared to other oils
2. more monounsaturated fat than any other oil except olive oil. monounsaturated fat is good for your cholesterol levels.
3. high levels of omega-3 fatty acids which are good for your brain, heart, and blood circulation

Olive oil is good for you too, but I don't like the taste it gives the food most of the time. Canola has a nice clean flavor.

Extra Virgin Olive Oil is the best. Look for one that can even say extra extra on it. And you know that you get what you pay for so the more expensive ones are going to be better for you and great taste.

Olive oil, peanut or canola. I just attended a diabetes class and
these three are recommended. If however you are allergic to
peanuts then you would want to avoid that.

Olive oil and peanut oil, but all things in moderation. It also depends on what you are cooking. If you are deep frying you may want to use peanut oi.
