OK, just to let you know: this is because I do alot of Mexican cooking and either cheddar or monterrey jack is best on Tex-Mex....I've used sharp provolone in the past.

Here in the UK we have a lot of good cheeses. Caerphilly is a white crumbly one which has an acidity - I don't know if that's what you meant by 'sharp'. If you can find French cheeses, then Cantal from the Auvergne is a lovely, characterful cheese that goes well as a garnish for a green or mixed salad.

Cheddar is a name for the process, rather than the place, now, and there are indifferent cheddars and tolerable ones. It's a firm cheese, not crumbly textured, and comes in flavours from Mild to Strong. Mostly it's very over-rated and has precious little character. Explore you local delicatessen and see what cheeses they have.

I love cheddar but you are in Italy! You've got a million great cheeses and neighboring countries on all sides with amazing cheeses. Enjoy yourself.

Try double gloucester...it is better than Cheddar and makes an excellent substitute but it is expensive.

In Scandinavia we have white Cheddar. Look for that.
