Like for French fries. It seems like most cheeses get hard and pasty when you melt them.

If you're willing to do the work, here's the best way:

Use whole "block" cheese (cheddar, for example)...do not use the pre-shredded "bagged" stuff, because it contains cellulose and/or cornstarch. These things will affect the way the cheese melts.

Use a grater to shred the cheese (don't use the "fine" setting on the grater---it will never work. Use the "medium" setting, as if you were grating potatoes or carrots). Shred about 2 cups' worth of cheese.

Pour about 1 cup (8 ounces) of milk or cream into a saucepan (cream will result in a richer, thicker sauce). Use medium-low heat and DO NOT LEAVE THE PAN UNATTENDED, even for a second. When the milk/cream comes to a boil, remove the pan from the stove, and throw in all the shredded cheese. Put the pan back onto the stove, and begin whisking the mixture (please use a wire whisk, not just a spoon). You may have to adjust the heat, up or down, just a little.

After maybe 5 minutes of constant whisking, you'll have a very thick, cheesy "sauce" to pour over (or dip) your fries, nachos, etc. There ought to be about 2 cups of it; what you don't use can be stored in the fridge...when you want to use it, just heat it in the microwave (when you do this, leave the lid on loosely, or put plastic wrap over the container).

Oh that's easy. The best way is to just take some shredded cheese and place it on the chips and mircowave for a couple of minutes....oh sooooo good. Can I come over and share? Heck I'll even make them for you!

Cut it up into chunks and place in something like a Corningware dish; cover. Put in microwave on defrost setting for about 2 minutes. Stir; if not the desired consistancy, go again for 1 minute. Repeat until desired result is achieved. Pour over french fries or whatever. If no defrost setting on your micro, use 30% power.

You can buy prepared dips for this in the mexican section of your store....if you don't see it, get some velveeta and melt in a double boiler.

My kids like me to add chedder to the mix to make it a little more gooey (adds some taste too!)

You're best off using something processed like cheese whiz or velveeta for that. Natural cheese gets all gloppy.

Try Velveeta, Guyere Cheese is good too.

use a double boiler...i don't own a microwave.i would think that would make the cheese terrible....
