There are different kinds of polytheism and many essentially believe in one supreme being but acknowledge the existence and revere the presence of other supernatural beings.
As for your first question, it depends on How you believe in them. You may believe in their existence but that won't make them Gods in your eyes. If you worship them (pray to them, invoke their names for protection or blessing, perform rituals in their name, submit your life and destiny to them, etc) then you would be believing in them as Gods and if, at the same time, you already worship a one supreme being, then by definition you would be a polytheist.
As to your second question, think of humans as made of much sterner stuff. The greatest power that any demon (or any other created being for that matter, including other humans) has over you is the power of suggestion. It is Your whims that will either bend to them or not.

Nope. Angels and demons are not gods. More like lesser creatures that do messenger work and stuff.
Demons don't generally mess with people but supposedly faith keeps you strong. "Messing" probably comes in the form temptations or sins.

Isn't one of the commandments "Thou shalt have no other god before me"
Right there in the words of god you have an admission there are other gods.
I figure it must be like a democracy, the god with the most followers gets to be the big cheese for 1000 years, then he has to step down and become ex-big cheese and go on the university lecture tour.
Hopefully our next god will be better than the last one.

I believe in cars, too, but the difference is I don't worship them.
Demons do mess with people, mostly through thoughts.

believing in angels and demons does not make you a polythesist, it simply means you are believing in the servants of the christ and the anti-christ.

Most Polytheist only serve one God, they recognise that there are other entities/Gods too. I don't think there is realy such a thing as 'monotheism'.
