How about a ground beef and rice casserole? Very quick and easy:

Ground Beef & Rice Casserole

1 lb. ground beef
1 med. onion, chopped
4 ribs celery, chopped
1 1/2 c. water
1 c. uncooked rice (not instant)
1 can cream of mushroom soup
1 can cream of chicken soup

Brown meat; set aside. Saute onions. Add celery and water and simmer 5
minutes. Add rest of ingredients. Mix well and place in casserole. Bake 1 1/2 hours at 350 degrees.


I also LOVE this Paula Deen recipe served with mashed or boiled potatoes:

Bubba's Country-Fried Steak and Gravy (recipe courtesy Paula Deen)
Prep 15 minutes, Cook 1 hour, Yield 4 servings

1 1/2 cups, plus 2 tablespoons all-purpose flour
1/2 teaspoon freshly ground black pepper
8 (4-ounce) tenderized beef round steak (have butcher run them through cubing machine)
1 teaspoon House Seasoning, recipe follows
1 teaspoon seasoning salt
3/4 cup vegetable oil
1 1/2 teaspoons salt
4 cups hot water
1/2 teaspoon monosodium glutamate (recommended: Ac'cent), optional
2-3 medium yellow onion, sliced

Combine 1 1/2 cups flour and 1/4 teaspoon of pepper in a small bowl. Sprinkle 1 side of the meat with the House Seasoning and the other side with the seasoning salt, and then dredge the meat in the flour mixture. Drizzle with water and re-dredge in flour mixture. Heat 1/2 cup oil in a large heavy skillet over medium-high heat. Add 2 or 4 of the steaks to the hot oil, and fry until browned, about 5-6 minutes per side. Remove each steak to a paper towel-lined plate to drain. Repeat with the remaining steaks, adding up to 1/4 cup more oil, as needed.

Pour off oil if excessive, leaving about ¼ cup. Make the gravy by adding the 2 tablespoons remaining flour to the pan drippings, scraping the bottom with a wooden spoon. Stir in the remaining 1/4 teaspoon pepper, and the salt. Reduce the heat to medium and cook, stirring frequently, until the flour is medium brown and the mixture is bubbly. Slowly add the water and the Accent, stirring constantly. Return the steaks to the skillet and bring to a boil over medium-high heat. Reduce the heat to low, and place the onions on top of the steaks. Cover the pan, and let simmer for 30 minutes. Bake at 350 for another 1.5 hours, until meat is super tender, adding additional water if necessary.


For a chicken recipe, this is a family favorite also served with mashed potatoes. There is enough sauce to go over the potatoes and it is wonderful:

Bacon Wrapped Chicken with Cream Sauce
6 boned, skinless chicken breasts, quartered (4 pieces per full breast)
1/8 lb dried beef
12 whole strips of bacon, cut in half or 24 whole slices
1 can cream of chicken soup
½ - ¾ cup sour cream

 Spray cake pan or baking dish with non-stick spray
 Mix sour cream and soup in medium bowl. Spoon a small amount in the bottom of the dish.
 Wrap each piece of chicken first in bacon and then in a piece of beef (the amount of bacon you use depends on your preference.). Arrange in baking dish.
 Spoon remaining soup mixture over chicken.
 Bake at 350 degrees for 2 - 2.5 (depending on your size of chicken pieces. I find if you make 2 pieces per half breast, 4 per double breast, then 2 hours is sufficient in most cases. Cook 1 hour covered and the remaining time uncovered).


My favorite out of these is the chicken followed closely by Bubba's country fried steak and gravy. I love the beef and rice recipe for east of preperation.

Here is a quick and easy mango mousse recipe for you to whip up when you crave for that special dessert. The sweet, juicy flesh of the mangoes will create a deliciously smooth mousse which will be tough to resist

Mango Mousse

Serves 2

Ingredients
Chopped mangoes 2 tbsp
Sugar 1 tbsp
Whipped cream 2 tbsp
Mango puree 2 tbsp
Chopped red raisins, cranberries or sprinkles
Shot glasses 2


Method
Combine the chopped mango with sugar and reserve. In a bowl, combine most of the mango puree, setting some aside for later, with 2 tablespoons of the whipped cream. Transfer the mixture into a piping bag and pipe it into the shot glasses. Spoon in the remaining mango puree on the mousse and top it with the chopped mango pieces. Garnish with chopped red raisins, cranberries or sprinkles. Chill the mousse in a refrigerator until it is ready to be served.

CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.

Crock Pot Enchiladas
Serves 6

1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies (leave these out if you don't want it to be spicy)
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup

Instructions:
Brown hamburger and chopped onion and pour off grease.

Put all ingredients in crock pot. Mix and cook low 4-6 hours.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6

6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated

Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.

In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.

In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.

Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Spanish Meatloaf
Serves 6

1-1/2 lb Ground Beef, lean
1 (5.5 oz envelope) Wyler's ''Hearty Beef Stew'' Soup Starter
1 (8 oz bag) Mexican Style Cheddar Cheese, shredded
1 (4 oz can) Diced Green Chili Peppers
1 (14-1/2 oz can) Diced Tomatoes, drained
1 Cup BBQ Sauce (recommended: Kraft Carb Well)

Instructions:
Preheat the oven to 350ºF

In a large bowl add the soup starter, diced green chili peppers, and the diced tomatoes; mix until the liquid is absorbed. Add the ground beef and BBQ sauce and mix thoroughly until well combined.

Place 1/2 of the mixture in a loaf pan, making a well in the meat, top evenly with the cheese and place the remainder of the meat mixture on top to seal.

Bake for 45 minutes; drain any residual fat if necessary.

Place the meatloaf on a warmed serving platter and serve immediately. Serve with mixed vegetables or a salad.

1 (8 oz pkg.) Louis Kemp Crab Delights, flaked

1/4 Cup Green Onions, sliced
1/2 Tsp Salt
1/2 Tsp Basil
1/2 Cup Heart Healthy Bisquick
1 Cup 1% Milk ''Skim''
1/2 Cup Eggbeaters
3 SecondsNonstick Cooking Spray

Instructions:
Preheat the oven to 350ºF

Mix the crab delights, shredded cheese, cream cheese, onions, salt, and basil in a medium bowl.

Coat a 9-inch pie plate with nonstick cooking spray and spread the crab mixture into the bottom.

Beat the remaining ingredients until smooth. Pour over the crab mixture and bake for about 40-45 minutes.

Serve immediately.

Strawberry Shake
Serves 2

1 Cup Frozen Strawberries, thawed
2 Tbsp Honey
1 Cup Cold 2%Milk
1 Cup Plain Yogurt
2 Tbsp Sugar Substitute (recommended: Splenda)
2 Whole Strawberries, garnish

Instructions:
Puree the strawberries and honey in a blender or food processor. Add milk, sweetener and yogurt; blend until smooth.

Pour into glasses; garnish each with a whole strawberry

"Cordon Bleu" Manicotti
1 pkg (12) string cheese snacks
12 slices each deli sliced ham and chicken breast
12 manicotti shells
1 jar pasta sauce
3/4 cup water
shredded parmesan cheese

Roll ham and chicken slices around each string cheese snack and slide into mannicotti shells. Mix water with pasta sauce. Pour a little sauce into bottom of baking dish. Place Manicotti in baking dish and pour remaining sauce over shells. Bake covered with aluminum foil (or if baking with covered dish, cover with lid) bake at 350 for 50 minutes or until pasta is tender. Top with parmesan and serve.


Ground Turkey Stroganoff
1 (8 ounce) package uncooked egg noodles
1 tablespoon vegetable oil
1 pound ground turkey
1 tablespoon minced onion
1 cube chicken bouillon, crumbled
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup water
1 can (stems and pieces) mushrooms, drained
1/2 cup sour cream
salt and pepper to taste

Bring a pot of lightly salted water to a boil. Place the egg noodles in the pot, cook 6 to 8 minutes and drain.Heat the oil in a skillet over medium heat. Place the turkey and onion in the skillet and cook until turkey is evenly brown and onion is tender. Mix in the bouillon. Stir the cream of mushroom soup and water into the skillet. Cook and stir until heated through. Stir in sour cream and mushrooms, season with salt. Serve over the cooked egg noodles.


Sailor’s Stew
2 1/2 pounds boneless beef chuck, trimmed of any large pieces of fat and cut into 1 1/2-inch cubes
6 tablespoons (3/4 stick) unsalted butter
2 1/2 pounds onions (about 5), quartered
2 1/2 pounds boiling potatoes, peeled and cubed
Salt and freshly ground black pepper to taste
3 cups beer (lager)

Preheat the oven to 450°F. Toss all the ingredients except the beer into a large ovenproof casserole. Pour the beer over the stew, cover, and cook until the meat is very tender, the potatoes are breaking apart, and the beer is absorbed, about 2 hours. You can deglaze the casserole with a bit of water if you like and pour it over the stew, which should be transferred to a serving bowl.


Over-Rice Dish
2 lbs lean ground beef or ground sirloin
1 Lg. can tomato sauce or 1 can stewed tomatoes
1 can water
1 TBS prepared mustard
1 TBS Worcestershire
1/2 medium size onion chopped
1 small green, red, or yellow pepper, chopped
salt and pepper to taste

Brown meat in heavy skillet. Add remaining ingredients and pour over meat in skillet. Bring to a boil and then simmer for about 1 to 11/2 hrs. until sauce is thick. Serve with rice or egg noodles.

prepare pasta as instructions
fry onion and bacon and sausages for 5 mins, drain, add sweetcorn, tomato puree(1tsp) and beans
mix together,and cook for few minutes
when pasta ready, transfer into ovenproof dish, cover with grated cheese, and grill until brown,
serve with salad
