It's chocolate nougat.

I've actually been crazy enough to make these and 3 Musketeers bars at home from the Top Secret Recipes cookbook. Here are the exact ingredients (and how to make it if you get inspired). This recipe obviously differs from the actual candy bar in that there are no preservatives or colors...and that's a bonus!!

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup
pinch salt
2 egg whites
1/4 cup semi sweet chocolate chips

In a large saucepan over medium heat, combine sugar, corn syrup, 1/2 cup water and salt. Stir often until mixture begins to boil, then continue to cook, using a candy thermometer to monitor the temperature.

While the candy boils, beat the egg whites until they are stiff and form beaks. Don't use a plastic bowl for this.

When the sugar mixture reaches 270 degrees F, or the soft-crack stage, remove from the heat and pour the mixture in thin streams into the egg whites, blender with the mixer set on low speed as you do this.

Continue to mix for 15 minutes or so. The mixture will thicken as you mix, until it reaches the consistency of cookie dough. At this point add the 1/4 cup semi-sweet chocolate chips. The mixture will not get any thicker after the chocolate is added so be sure the candy is very thick and fluffy before adding the chips.

When the chocolate chips are completely blended into the candy, press the mixture into a greased 9x9 inch pan and refrigerate until cool, about 30 minutes.



The recipe goes on to tell you how to turn these into either Milky Way or 3 Musketeers. I don't make them like the recipe. I'll either just cover the nougat with melted milk chocolate for 3 Musketeers or melted caramels then milk chocolate for Milky Way.

Ahem...

MilkyWay: Milk chocolate with a light whipped white centre (61%).

Ingredients: sugar, glucose syrup, cocoa butter, skimmed milk powder, vegetable fat, cocoa mass, milk fat, lactose, demineralised whey powder, barley malt extract, salt, emulsifier (soya lecithin), egg white, hydrolysed milk protein, flavouring. (Traces: peanut, hazelnut, almond). Milk chocolate contains milk solids 14% minimum.

Looking at that, I would say it is probably made mostly out of milk (in various forms: powder, fat and protein) and egg white.
