Because 'Bastard' is a technical term meaning a child born out of wedlock. Not conceived out of wedlock.

According to the old test. in the bible. it says that who ever was born from a sex relation without marriege God curse him for 7 generations. This is not my opinion this is what it says in the Old Testement. Even the story of the woman who made adultry and they brought her to Jesus (PBUH) in John 8:1-11 according to the NIV (New International Version) bible the footnote says that John 8: 1- 11 does not exist in the oldest text of the bible and it says that this story was added but they don't know by whom !!!

From a theological standpoint, it probably has to do with the concept of sin, repentance and forgiveness.
The legal aspect has already been answered, though the term is disappearing from common usage. Punishing a baby for the acts of the parents is hopefully on its way out.
