Funny thing about Chinese food in America. It changes depending upon what part of the country you live. I am from the west coast. I LOVE the Chinese food we found there. I now live in the Great Plains and our Chinese food here is...well, not so good. I've gotten used to it but folks out here don't like too much change so the folks running Chinese restaurants had to adjust the sauces to please the palates of the locals, which are not as educated as those on the coast.
I've gotten used to the Great Plains version of Chinese but my husband still gripes about it.
And yes, I know that American Chinese is not REAL Chinese....thank the Goddess! lol Probably wouldn't appreciate some of the ingredients that authentic Chinese food has. lol

p.s. all of the Chinese restaurants I've been to employed Chinese cooks as far as I could tell.

Good Chinese cooked by Chinese is the best, especially if you're going to a dim sum bar! Dim sum just isn't quite the same if prepared by a non-Chinese chef.
Although there *is* a Chinese restaurant in New York City that's owned and run by Hispanics, and the food was excellent when my friend took me there.
And having said that, I am headed out to the local Chinese buffet for dinner -- really!

I like Chinese food, as long as it is prepared authenticaly. Most of the time, this means eating it in China, or making it myself - some of my friends while I was over there taught me how to make some things, as well as gave me a chinese cook book.

China is a huge place and Chinese food covers a whole variety of dishes rarely replicated in the local Chinese and Vietnamese takeaways in Sussex.
They vary considerably. Many dishes of overcooked or reheated vegetables seem to destroy what is good about Chinese food. If you are favoured customers, you may get decorated bits of cucumber and tomato roses.
I do not like the Chinese style rice generally (too sticky) and I am not mad keen on the noodles either. Never seen their bread.
In England I think we normally get Canton food, whereas Szechuan food is probably more to the conoisseur's taste?
Not many Chinese in Sussex. More in London.

Well, when I was in China as a child, I am always sick of my own food. WHen I came to the US, I discovered the American version of CHinese food suits my tastbuds better, but soon I became bored with the same sweet-salty-greasy apperence of American Chinese food. I went back to China this summer, and realized there are so many different food that I like. So I guess if you are willing to discover new things, you will always find things you like.

first of all in America the Chinese food is not real Chinese food. China has different regions like Cantonese, Mandarin and Szchawan So it all depends. For eg: fried rice and egg foo young is not really chinese.
If you want to eat real authentic chinese food, you need to go to China town and ask for the chinese menu.
Real Sczhwan food which i love...consist of Spicy fish, salt and pepper seafood, or Mo po tofu, Shing la gigi (dry chili chicken) and there are so many differen types of foods used in chineses cooking like beef lung or pig intestine..these are real chinese foods.

Question is almost unintelligible but here goes. China is one hell of a big country. It's like asking if you like European food, from raw herrings to dolmas.
Personally I like Chinese food from the west - Sichuan, hot and spicy. In the north they cook more with noodles than rice. Most Chinese restaurants in the UK cook Cantonese food (Guangzhou and Hong Kong), interesting but not highly spiced.
Coastal areas have great fish and seafood dishes.
Pork goes without saying. Peking duck has to be good - if properly prepared, it's said it takes a chef 30 years to learn how to do it correctly.

chinese food is great but personally i only like the authentic kind from chinatown. the food from the fast food stores like panda express, or china chef have too much sauce which cancels out the flavors of the actual dish. of course you dont have to be chinese to cook chinese food since it's only the style it is cooked. i cook mexican food when im not mexican, what difference does it make?

In my small world I love Chinese and I'm talking the variety you get at the dime-a-dozen- Chinese buffets in every town. But I am worldly enough to realize that I'm not really eating Chinese food but an Americanized version of such.
