I want personal recipes, please- or if you do actually use a website for your recipes that you have tried, that would be fine, too.
I don't like to eat meat all of the time and I love ethnic foods. I have a couple of good Eastern Indian recipes that I use but I'd like to broaden my recipe list. Thanks for your time!

My absolute favourite vegetable dish is steamed green beans with some lemon juice on them . Yum !
another good one is a vegetarian version of stuffed peppers, but I use boiled cabbage leaves ( since I make this according to the Russian dish - golubtsy).
You can use tofu or vegetables only.
1. First part is a stir-fry.
I saute onions with garlic and add some tofu ( may be omitted), then add some chopped carrots, thinly shredded cabbage, then, after carrots and cabbage are soft I add some chopped zucchini, bell peppers, jalapenos ( LOVE Jalapenos), cilantro or parsley
and almost immediately turn the stew off: zucchini is very gentle, it should not be overcooked and the greens will just turn yellow if cooked. ( use any vegetables that you like - the recipe is very flexible. BUT if you want to use eggplant, first chop it and put salt on it. then let it stay until the eggplent pieces turn dark and have some juice out - the eggplent has very specific flavour which can be unpleasant and pretty strong - enough to ruin a dish).
Oh, did I mention salt and black pepper ? sorry. They can be added at any stage.
Boil water in a deep pan, add a bit of salt, and boil cabbage leaves for a couple of minutes - until they become soft, but not too soft. The best way is to boil 2-3 cabbage leaves at a time.
now, put a spoonful of your vegetable stew on an end of the cabbage leaf and roll it in a nice roll ( like a burrito, make sure to fold the ends so that the filling does not come out.
You can steam the "golubtsy" for a couple of minutes or you can do the following.
saute onions with carrots, then add some chopped tomatoes and then - when tomatoes are cooked- add a little a little water. put the rolls in this sauce and keep on the stove for a 2-3 minutes, then enjoy.
you can also add rice to the stew and then you'd have to allow more cooking time for the rolls when steaming of cooking in the sauce.
Aslo, have you tried falafel? MIddle Eastern staple - I love it.
Middle Eastern cuisin is extremely reach in vegetarian dishes.
Another good choice is Korean: for every dish with meat I can name 3 or more which are meatless.

Here's a nice one.

Yam Onion Curry

2 Purple Onions - Chopped
2 Tablespoons of Curry Powder
3 Tablespoons Water
3 Chillis - Diced
2 Tablespoon of cornstarch
5 Cups Vegetable Broth
2 Yams - Peeled & Cut

1) Saute onions in a frying pan with vegetable broth.
2) Add yams, chilli & curry powder. Stir.
3) Mix in cornstarch & add water.
4) Cover frying pan & cook on a low flame for at least 10 minutes.
5) Serve!

okay, this is a sindhi dish can be used as an appetizer.

Ingredients: Potatos, preferably brown large ones, cilantro, green chillies, jeera ( I think its cumin seeds), one- 2 slices of any bread, onions ( if u want), salt and oil.
Boil the potatoes, and add some salt when u boil them, enhance the coking process.
After they are boiled ( pressure cook is faster), mash them, add chillies, onions, cumin, and cilantro. Soak two slices of bread in water for a 2-3 seconds and add to this mixture. You can also add bread crumbs.
Heat oil in a shallow pan, and when its really hot, make the mixture in any form like a heart or round or vertical, or like cookies and fry them. Once they turn light to medium brown u can put them on a paper napkin to remove the excess oil.
Now eat them, with ketchup or mint chutney.
Now what is mint chutney......that u have to come to my house.

Paneer Bhurji

Ingredients

Paneer - 250 gms (crumbled like bread crumbs).
Onions - 2 (chopped finely)
Garlic - 1/2 tsp (crushed)
Ginger - 1/2 tsp (grated)
Green Chillies - 2 (slit lengthwise)
Tomato - 1 (chopped finely)
Cashews - 5
Capsicum - 1 (slit into long thine strips)
Garam Masala - 1/4 tsp
Black Pepper Powder - 1/2 tsp
Turmeric - 1/2 tsp
Sugar - 1/2 tsp
Red Chilli Powder - 1/2 tsp
Salt - to taste
Lemon Juice - 1 tsp
Ghee - 2 tbsp
Butter - 1/2 tbsp
Milk - 3 tbsp

Method
Heat ghee in a heavy saucepan. Fry the cashews, to a golden brown. Drain, keep aside.
Fry green chillies. Drain, keep aside.
Fry the capsicum till tender. Drain, keep aside.
Now add ginger, garlic to the ghee and fry for 2-3 seconds.
Add onions and fry till pink.
Add tomatoes and fry further till mushy.
Add all the masala and milk and cook for 3-4 minutes.
Add butter, lemon juice, sugar and paneer. Mix well.
Take in a serving dish.
Garnish with fried cashews, chillies and capsicums.
Serve hot with naans, parathas, etc.

This is SOOOOO quick to make, and it has saved me from ordering pizzas a million times in the holidays.

For variety I make it as a roll and give it to the kids, or stuff it in potatoes and make patties .

Eggplant parmesan. I peel then slice the eggplant. Dip it in a bowl of egg and then a bowl of breadcrumbs and fry in olive oil. Blot on paper towels and place in glass dish with tomato sauce and mozzarella cheese and bake at 350 for about 30 minutes. Delicious.

I make a wonderful vegetarian lasagna. I make it like you would a regular lasagna, but I use meatless sauce and I add 2 layers of my favorite veggies instead of 2 layers of meat.
I use things like zucchinis, broccoli, mushrooms, spinach, and so on....I add other veggies depending on my mood or what ever I have on hand
