That is a really good question; also they prefer rye to white or even brown. They must have 200 kinds of rye bread, 1-2 types of white. They have a museum devoted to the history of bread in Ulm. They also have several thousand types of beer, so it's probably safe to say the two traditions are a result of their agricultural heritage, predominantly based no grain production (followed by dairy production and livestock, pigs, horses; followed by wine and liquor production and hunting, especially for venison).

To put it more generally, Germany is like the US, it is a regionally based country, and as that different breads were prepared in different areas over the centurys. They had rye, wheat, oats, barley and other grains to work with, and before the advent of commercial yeast,and because beer has yeast in it, it was a wild formation that started this, along with the fact old bread and the beer ingredients do mix.
Also, the types are based on the foods they consume, whether it be meat or other things, like a bread and bacon dumpling called Speckknoddel. Hopefully this is more of a round about explanation

An obvious reason is that bread is a big part of the German diet, and usually eaten for breakfast and as sandwiches in the evening, not as a side dish for the main meal. The importance of bread (Brot) in German cuisine is also illustrated by words such as Abendbrot (supper, literally Evening Bread) and Brotzeit (snack, literally Bread Time). The country boasts at least 300 different types of bread, ranging from white wheat bread to grey bread (Graubrot) and "black" (actually dark brown) rye bread (Schwarzbrot). Most types of bread contain both wheat and rye flour (hence Mischbrot, mixed bread), and often wholemeal and seeds (such as linseed, sunflower seed, or pumpkin seeds) as well. I like the bauerschnitten (sp?) type of bread. It is very heavy and has whole grain. I do not know how many types of bread that Germans make but this one is really good.

Bread is a staple in Germany. Breakfast consists of a roll w a variety of cold cuts and cheeses with a strong coffee. Variety helps. Also, they don't have refrigeration the way we do in the states. There isn't space in their fridges for lots of bottles, vegies etc...Going to market is a daily thing. As a teen there was a woman who often came with fresh Brochen(sorry about spelling) and gummis. I have yet to find a bakery that carries the variety that they do.

My guess is, Germany and it`s nearby niebors can produce so many different types of grain,they can make so many different types of bread(and beer) as well,the climate and growing season must be friendly to many types of grain.

they have no more then we do it is just the way they market it to you ,,,,,the little bakery on the corner or delivered to your door...it doesn't have all the additives in it as we do so that is why you also get fresh bread fro the bakery.....we have some great bread store here also just have to look ....i use great harvest bread company ..if i dont bake it myself...
