how does salmonella appear as far as i know it is invisible unless you have a high powered medical scope. what is your question really?

I work with eggs.

No egg producer can say that its eggs are 100% safe salmonella free.

All fresh shell eggs should come from vaccinated flocks.

However, this doesnt mean that as a result all eggs from such flocks will be samonella free. Salmonella has a variety of strains and can mutate into other variants.

Raw eggs should never be used to make products that will be uncooked. Ice cream, cake icing, mayonaisse,cake toppings that kind of thing.

Its best to use pastuerised liquid egg for these kinds of dishes.

Fresh shell eggs are perfectly safe so long as the egg is cooked thoroughly.

Older people and young children are more susceptible to the effects of salmonella.

I've made Tiramisu and Chocolate Mousse with raw egg whites and ate myself, gave to many people. Havn't had a problem yet. In this case, I use the highest quality I can find(organic, cage-free eggs, etc)We ate raw eggs all the time in Japan and France. I heard US agriculture law is not strict compared with other countries so the food here is not very safe in US .

i have been eating raw cookie dough for years....love it. But it does contain raw eggs. Am I taking a chance? Perhaps. but walking across the street is taking chance also. Seriously, always make sure eggs are pretty fresh. before due date. they are cheap, just throw away if old.
