The healthiest Veggies are the one which are grown in the area you are. They are at their best when you eat them when it is their season to ripen, So seasonal veggies are the best for you; so goes with the fruits.
Cauliflour,brocolli and dark green veggies are good for kids and women as they have high protein, and iron, orange and red colored veggies are good for the eyes and kidneys, and so so on...try googling it on the nutritional pages of the vegetables...but keep the principal in mind eat the local-seasonal fruits and veggies. sweet potatoes
dark leafy greens (like spinach, kale)
cauliflower
broccoli
Also, I recently read a study that said to look for brightly colored fruits and veggies. The brighter colors indicate higher levels of phytonutrients.

Any vegetable that is green is very good for you. They are known for fighting cancer cells and keep your stomach nice and clean.
Also, per example, brocilli and spinach are good for folic acid, which is excellent for your teeth, hair, bones as well as many other benefits.
Tomatoes are also good for fighting cancer cells, specifically if you are a male, it is good for your prostate.
Never the less, if you are a vegeterian, you have to make sure that you get enough protein and other nutrients, so it would be a good idea to take a multi vitamin daily.

eat by color.. adding all the colors to your plate makes it a heathy meal there is nothing like healthiest veggi..
if you only eat one type of veggi you can get deficient in nutients..
so a healthy balance of all is good.
eg of color are
carrots, sweet potatoes..orange
Tomatoes.. red
spinach, asparagus.. green.. etc..

Sweet potatoes are loaded with good stuff. I think it's best to eat a variety because just one alone doesn't cover all your daily requirements. I'm not sure what is the best but I have read that you shouldn't expect much from iceburg lettuce and cucumbers.

depends on your part of the world and the availability to get it
I'd say a tomato but it's technically a fruit
brocoli and cabbage, cauliflower and spinach are also great
also how you cook don't take the skin off, wash gently and don't over steam or bake to keep health and nutrition in,
then don't douse with butter or sauce and undo healthy aspects

Here's the rule of thumb the darker or deeper the color the better the fruit or vegetable, but you need to have a variety of them to give you the array of vitamins your body needs. Most people are defficient in one or more vitamins and don't even know it. Happy eating :)
